I’ve only used it once following all the instructions before I fried two over-easy eggs. No problem at all. Then I used it to melt Swiss Raclette cheese. Got stuck. Scraped off whatever I could. Soaked the inside of the pan with some cold water and left in the fridge overnight. Everything came off with a bit of dawn and some scrubbing with a plastic spatula. Conclusion: satisfied.

I oiled it as I do with all my other D3 products, I did not toss in a pile of salt, and when cleaning, we found several spots that have the look and texture of stainless steel pitting.

Two tries to get it right. First pan arrived with a stained lid interior, a pitted convex pan interior bottom, and a concave exterior bottom. Returned. The second pan also arrived with stains on the underside of the lid, and the same convex pan cooking surface, and concave exterior bottom.They were sent from two different distribution centers, so this is a manufacturing or design problem. The odds of two pans having the same defects coming from stock in two places separated by 1000+ miles is so astronomically small as to be laughable.Buy this only if you have a gas stove or cooktop, and you don't mind liquid or oil pooling around the edge of the pan. It will absolutely NOT work with induction.

The heat is even and it's very responsive to heat changes. If I can pass along a tip for people reading these reviews - it's horses for courses. The sticking people complain about is actually a "feature" of all stainless steel, it's why professional chefs will use stainless for certain foods, to build up the fond in the pan then deglaze and turn it into a pan sauce. Besides most proteins, I can do a mean omelet in this pan, but I have other pans that make it easier. Fairly good fry pan, but it does need fat and certain items still stick. Pretty light weight for those who think cast iron is too heavy. Slim profile and induction compatible which is why it appealed to me. However I wish the lid was glass. Pricey! You are paying for the name brand, but I wanted to see if it was that much better than the others.I had another set of induction compatible recycled stainless steel in the past that worked just as well, but due to a long move we left them behind, unfortunately.

The package arrive, I opened it, did a quick warm sudsy wash, dried it and immediate put it to work. I have used it every day since it arrived and have had great success with each use. I have stir-fried veggies, caramelized onions, popped popping corn, grilled cheese sandwiches, cooked bacon, braised a 7 LB pork butt, made homemade hash brown potatoes just to mention a few uses. The pan performs beautifully and even when it looks like a nightmare to clean up, it is always very easy and shines right up. The size is perfect, especially for those things that say, "cook" in a single layer". I actually prefer using it on the stove than doing things on sheet pans in the oven. It's light weight but sturdy for heavy duty cooking. Love, love, love it.
Continuing Love & hate relationship with allclad lately. So excited to get 12 inches fry pan with lid but found out that lid looks off from the center. The lid handle is not located from the center. It is not the first time having a quality issue with allclad especially lid. It make a extra trip to returned it to the store. So, it makes me rethink allclad products that it keep failing quality. So, will consider to purchase toward European brands instead of U.S brands. So far, Has been not failed with well known European brands yet that still keep a good quality control esthetically & functionally moreover, made with safe materialsIn my experience. Want to love more than hate allclad!!!
I have been looking for a stainless 10 inch fry pan for a while since I decided to eliminate non stick pans. This pan is the PERFECT pan for making omelets! Since it is stainless steel, cooking sprays can be used. The size, shape, and even cooking enables easy cooking and folding of omelets. The size is also excellent for various other cooking needs, such as smaller cuts of meat, etc. I especially like the even cooking…there are no “hot spots” as some pans have. Clean up is easy, too. I highly recommend this pan for any of your cooking needs!
