Good overall pan

Good pan and with its natural non-stick quality it's so much better than pans with non-stick coatings. But it's not 100%. The centre of the pan (that gets the most direct heat) does still stick a little when cooking more delicate foods such as eggs. But overall, happy with carbon steel, will never go back to pans made of other materials.

The instruction does not say anything oxidation

I bought this pan some weeks ago and I am truly dissapointed as I am throwing it out. I used it three times and it was excellent. And then I used it for the 4th time. Would like to add that I read the instruction before using. And there was no explanation about the oxidation. So what happened? I cooked aubergines and added chopped tomatoes from a can and cooked them for no more than 10 minutes or less. And I had no clue about the no-tomato (or no lemon or no wine, did not try that ones) rule with steel pans. I bought this pan some weeks ago and I am truly dissapointed as I am throwing it out. I used it three times and it was excellent. And then I used it for the 4th time. Would like to add that I read the instruction before using. And there was no explanation about the oxidation. So what happened? I cooked aubergines and added chopped tomatoes from a can and cooked them for no more than 10 minutes or less. And I had no clue about the no-tomato (or no lemon or no wine, did not try that ones) rule with steel pans.
