This chocolate has a nice fruitiness to it. I think I’m perhaps a bit spoiled by milk chocolate and can’t fully appreciate this dark chocolate for what it is, but nonetheless, it’s a very nice, fruity, slightly bitter dark chocolate - exactly what I’d expect in a dark chocolate!
Flavor and texture were quite good. I tend to prefer a bit darker but there were no issues with the quality. My go-to is 72% and wanted to see how much difference the 1.5% really made. I'd recommend it to any dark chocolate lover, but not if they really like it bitter.
I keep trying other brands and other Callebaut products, but this on. hits the sweet spot.
This chocolate has an incredibly intense flavor, slightly bitter, which I like. I also like the size of the callets, which are easily melted for the tempering process. The texture is not quite so creamy as some other brands (e.g. Guittard) so when I make chocolates, I blend at least 1 other brand of about 70% chocolate. The blend has lots of flavor and a great texture for me.
Had high hopes based on other reviews, terribly disappointed. OK for some baking, but inferior to many other brands. Overly fruity at first, flavor doesn't last. Unpleasant finish reminds of old coffee. Tried in couple of different baked goods, same result. Would not buy again, giving away the remainder of what I did buy.
