I love my new deBuyer Mineral B 9.5" omelette pan. For decades I've been using a small (7") deBuyer pan along with a large (12") cast iron skillet and decided the time to splurge on something in-between was long overdue. I could hardly wait to use my new pan! But, I did; and after lovingly and patiently seasoning it over a number of days to a beautiful bronze patina it's become my go-to, all-purpose pan. I would also highly recommend Cook Culture's Beeswax Seasoning paste. Having used it to season my new pan, I won't be using any other product for pan maintenance.

This is the first carbon steel pan we've had. Looked at online reviews and settled on the mineral B omelette pan. Seasoning went well, fried eggs slide nice, better than other non stick pans we've had. Haven't tried much else for cooking. The sides haven't seasoned like the flat of the pan, I think that maybe due to our electric smooth top versus a gas stove. We'll see how it goes. It's been a good purchase.

I love the mineral b pans. after seasoning the pan it becomes virtually non stick. I bought this particular pan to use as a dedicated pan for eggs and omelettes. The pan has a bigger cooking surface than the picture of it lets on and that makes it easy to handle any kind of egg cooking. fried eggs can easily be turned over with a spatula, or because it becomes virtually non-stick, the eggs can be flipped by sliding them around the pan to the curved sides and be flipped by a flick of the wrist if you like your eggs over easy as I do.To me, this is the perfect pan for eggs!!! this pan is not just for eggs though, it will also cook everything else one cooks on the stove top but I dedicated my new pan to eggs. But overall, I can get 95% of the Teflon performance without the harmful chemicals and that is pretty good in my opinion.
