The opening bouquet is complex and luminous, a mingling of white flowers, citrus and stone fruit. The overall effect is enhanced by the freshness of aniseed and crushed mint. The final aromas offered by the wine are starting to show spicy, woody and roasted notes. After a long period of reluctance, the wine is finally opening up. There is complete balance between the nose and the palate. Its slender, minimalist, pure, toned, athletic character is now also expressed with warmth. The fruit is pronounced and clear. The vintage's characteristic acidity is remarkably well integrated. Its persistence is mainly aromatic, grey, smoky and highly promising.

Super wine. Next to the 2008, this is more approachable. A superstar.

I was given a DP 2000 as a gift, and we thoroughly enjoyed with fish and chips. The 2004 is just as good, still got 2 bottles lying in the cellar.

I first drank DP on a flight back to Oz just before Covid. I could not stop with just the introductory glass and had many top ups. It was fantastic. As I cannot relate to the fancy descriptions used by the professional journalists, I can honestly say that its aroma and palate was very very enjoyable. I had a big smile on my face after we were home with the empty bottle and cork to remind me. A good souvenir.

A nice bubbly without being special. Had no discernible yeast aromas or taste. Which I consider the one non-negotiable in a high priced Champagne. Third time I've bought Dom, the other two, in the 1980s and 90s were far superior.
