The Global Ceramic Water Stone Sharpener consists of two ceramic wheels. The first stage is a white coarse wheel and the second stage is a pink fine wheel for a complete sharpening process. Directions Pour water into the compartment of the sharpener and keep it there during sharpening operation. The water in the wheel compartment serves always to rinse the revolving ceramic whetstones and to prevent over-heating the knife blade. The sharpener should always be rinsed with clean water by removing the cover after use. To keep the sharpener steady, firmly grip the handle with one hand. Hold your Global knife with your forefinger on the back of the knife and place the knife blade vertically into the Coarse White Wheel. Move the blade back and forth with slight pressure 7 or 8 times (15 strokes with other knife brands), or as necessary without heavy pressure. Next, place the knife blade vertically into groove the Fine Pink Wheel and move the blade back and forth with with slight pressure 7 or 8 times. It is very important not to apply too much pressure when passing the knife through the sharpener, as doing so may cause damage to the wheels. When sharpening is complete please hand-wash knife blade in hot water and carefully dry with a dry towel or cloth before use.

This ceramic sharpening tool was a recommended item by a friend. Long story short, I used to own highly specialised sharpening tools when I owned a carpentry and handyman business. All my stones and electric devices were lost to me in a divorce process. So, as I am buying new water stones, I had this recommended to me.I am actually very pleased with it. I can’t express how nice it is for me to have a santoku kitchen knife sharpened enough that it cuts ripe tomatoes cleanly and effortlessly.

Comfortable handle and rubber feet keep it in place during use. It has two sharpening stones set at an angle which was confusing at first until I realised it should be used through the clear plastic guide ‘slits’ which are 90 degrees to the handle. Tried on cheap supermarket knives which made them ‘tomato sharp’. So risked it with my Japanese knives - no problem. Have read reports of the stones breaking but OK so far.

Purchased this sharpener for Global knives. Works brilliantly. You just need to be careful to apply only light to moderate pressure and apply it consistently all the way along the knife blade. A little practice and you should have it sorted. Our full set from paring to chefs knives all sharpened up beautifully. Also tried it on a Wusthof chef's knife and it worked perfectly.
