Global Ceramic Sharpening Steel 22cm
Global’s ceramic sharpening ‘steel’ can be used to sharpen knives in the Western style. The 22cm steel is an alternative to whetstones and pull through sharpeners, perfect for seasoned professionals. To use a sharpening steel, follow the instructions below: Hold the steel vertically with the tip placed on a flat surface/counter. Place the blade against the steel and hold the blade at a 15 degree angle away from the steel. Slide the blade down the length of the steel in a sweeping motion, pulling the blade towards you. Make sure to do the same amount of strokes on each side of the blade to ensure it's sharpened evenly. This 22cm sharpening steel has been specifically designed for use with meat knives. Global knives have been hand-crafted in Japan for over 30 years following Japanese sword-making traditions. Global kitchen knives were first designed in 1985 by Komin Yamada. His aim was to create a series of knives using the best raw materials available, which were easy to handle yet durable, and could be used by both chefs and home cooks alike. The classic knives collection have Global’s famous Cromova18 blades and are sharpened to a 15 degree angle to provide a smoother feel when chopping. Each knife has a weighted hollow handle for ease of holding.

Its for smaller jobs on the knife, if you have a big crack, it take ages to make it good. Thats needs to be done in a shop. But smaller things is OK. Good therapy when you watch TV :-)
I have one and it works!! I bought this from a local company but it was a duplicate gift. I tried to find out how to return it and went via a company search to find a phone number. The person at Knives from Japan gave me incorrect information twice. My computer literate son eventually sorted out where to return the knife sharpener, and sent it back. It then took 8 weeks for my refund to arrive. This was 12 weeks after the original purchase.I will not recommend this company to anyone! My replacement purchase came from Amazon. Shame on you Knives from Japan.
The ceramic sharpening steel is excellent quality. It was delivered promptly and arrived in pristine condition. A few You Tube videos later and a couple of practices on a few old knives I used it on my Global knife set. Excellent results!
I use this everyday, every time I use my knives. Keeps them well-honed.
