Global SAI-M03 Santoku Knife 13,5 cm
The name Santoku comes from Japanese, combining the words "san" (three) and "toku" (virtues), which clearly outlines the purpose of the knife. The knife is suitable for cutting vegetables, fish, and meat. Santoku knives have a distinctive blade shape that is easily recognizable. To complete the Global Sai knife series, Yoshikin has added another Santoku knife, the Global Sai Santoku 13.5 cm Sai-M03, in addition to the larger Santoku kitchen knife Sai-03. Weighing 153 grams, it features the typical Global Sai characteristics of a sand-filled, balanced handle and a special thumb grip position, making it both comfortable and safe to use. The blade length is 13.5 cm. The Santoku consists of three layers. The two outer layers are made of a slightly softer stainless steel alloy called Sus 410, designed to protect the hard Chromova 18 Sanso core, which has a hardness of 59 degrees Rockwell, making it resistant to external influences. The handle of the Santoku knife is ergonomically shaped and features a special grip position for the thumb, allowing the thumb to rest gently at the transition between the handle and blade, ensuring a loose and relaxed grip. Like the classic Global knives, the handle of the Sai Series is filled with fine sand to achieve perfect balance and ensure well-balanced work. The seven dots on the handle represent the seven virtues of the Samurai, honoring their centuries-old tradition of knife making. Another design feature that adds liveliness and modernity is the hammerblow look, applied by hand, which not only enhances the knife's appearance but also serves a practical purpose, similar to hollow grinding on other cooking knives. Due to its exceptional sharpness and perfect handling, the knife is ideal for both professional kitchens and private use.

It's the biggest knife I've ever own and I absolutely love it. I love the look of it. How it's stainless steel all over. no wooden bits, or corners for food to get stuck in. Easy to wash too.

The balance and shape of the Sai knives is wonderful and the blade quality is top notch. This santoku is a nice size for quick, every day prep work and turns out perfect chiffonades, dices, and slicing every time. I haven't needed to sharpen yet as I am not a super heavy user. It's worth noting that I also have a heavier german style chef's knife for heavier work like cutting through a large melon or hard squash.

Knife feels great in my hand, has a great weight, and is great size and shape for use as a heavier petty knife. My only real complaint is the edge. It’s not near as sharp as I would have expected from a global, and had I not bought it on sale I would have returned it. I wouldn’t say it was dull, but it definitely wasn’t sharp. For the price, I don’t mind having to sharpen a brand new knife, but I shouldn’t have to.

Great ergonomics, weight, and balance! Perfect as a utility knife.
Years ago, my husband bought me a set of Global knives and I hated them. Not because of the quality of the knife itself, but because the handle of those knives was not comfortable to hold and work with. Fast forward to this knife. What a difference! Fits my hand like a glove and of course, Global makes a really nice knife. This is my new go to knife for everything.
Love the knife! I use it for everything. Great for chopping vegtables. It is the sharpest knife I have ever seen.
This knife is in constant rotation in our home kitchen. Perfect size and feel. Very happy with our purchase!
PERFECT SIZE FOR DICING, CHOPPING ETC. WELL BALANCED KNIFE & QUALITY DESIGN
This is a great addition to my knife collection. small enough to use on smaller veggies or meat cuts. I have the 7.5 in companion knife and the make a great duo.
There's lots to like about this knife. We have two Global classics, and one Global Ni in addition to this Global Sai, and I prefer the shape of the Sai's handle. It fits very nicely in the hand, and is very good for a pinch grip, too. The only disappointment is that the description claims that the hammered finish adds some non-stick properties, but it is not as effective as a hollow ground edge. Other than that, I would give it five stars.
