I caught a Calphalon saucepan leaching chemicals into boiled water from the sides, once. I'll only use ceramic, now. This is my second pan.I'LL NEVER GO BACKThe first pan stayed pretty non-stick for about 8-months, and I always preheated the pan at a very low heat, used medium heat at most. It's a good enough pan that it still browned at that heat, even w the nonstick coating. The middle of the pan is stickier, now--But it's still a great pan. I got this 2nd one to dedicate for eggs/cheese/reheating Rice and other sticky stuff.I'll use the original for my day to day. I've used this first pan often and well.I plan to keep up this rotation.

This pan is excellent! I see why it's listed as America's Test Kitchen favorite. I have tried ceramic pans before and they weren't as good as they claimed. They weren't easy to clean and the ceramic stuff wore out over time. This pan is non-stick, heats up well, and is very easy to clean. I have tried several different kinds of foods in it, and it cooks and cleans just as easy with egg whites (which is one things that usually sticks on any pan) as it does with anything else. I am assuming that the skillet is heating up evenly which is why it takes so long to heat up. After allowing the pan to cool as indicated, washing it was a breeze. All of the butter/fish remnants just fell on with water alone before soap was added. The packaging is misleading, though.Now for the cooking part, clearly the instructions point out to not cook on high. I know this is very tempting in todays very fast paced world. True to the words in the instructions, this pan heats thoroughly and evenly. So, take a couple of minutes and let the pan do what it was designed to do. You will be very pleased with the results. I have been using the pan for a while now and have not had a single issue of sticking items nor staining of the pan. The pan heats evenly and I have had great results with my meals.Clean up also lived up to the hype. I am looking forward to a great relationship with my now everyday cooking pan. Happy Cooking!

The handle is non-insulated metal and can get very hot therefore requiring appropriate, cautious handling.The non-stick internal ceramic coating appears to perform very well, and hopefully will remain effective and durable over the long-term. Most non-stick coatings eventually fail or wear after varying intervals of use and possible abuse. Non-stick cookware should not be exposed to excessively high temperatures, particularly when dry/empty. No cookware stays perfect after being burned, but nonstick cookware will almost always suffer permanent damage. The manufacturer claims that this nonstick coating is free of PFOA, PFAS, lead and cadmium and is oven and broiler safe. GreenPan claims that the non-stick coating is metal utensil safe, chip and scratch resistant.GreenPan claims that the nonstick coating is safe for use with metal utensils. I never use metal utensils with any nonstick cookware and only use silicone, plastic or wood implements to preserve the integrity of the bonded, nonstick coating.The GreenPan 12” frypan performs well on the stove. I measured relatively even heating on the bottom surface.GreenPan packaging and documentation does not refer to use of this frying pan on ceramic/glass cooktops. Given the rough texture of the bottom of the frying pan, I do not know whether or not if it would be wise to use it on a. smooth-top range.Cleanup was extremely easy. The nonstick surface meets expectations and cleans very easily with just a sponge and dish soap, with very little effort and no need for difficult scrubbing. After repeated cooking, washing and drying, the interior and exterior of the pan, inclusive of the nonstick coating, still appear as if brand new.The GreenPan cookware, has a two year warranty for the nonstick coating, and the rest of the product is warranted for the lifetime of the purchaser.Overall, the GreenPan, Valencia Collection 12” Frypan is very nice. It is apparently well designed and constructed and appears to be robust. I hope that it will also be very durable for the long-term. I have every expectation that this frying pan will serve us well for a very long time. It is performing very well now, and certainly meets or exceeds expectations.

Overall, I do like that pan but I will use it make dishes like crepes.
