Tried the Cracked Pepper and Garlic blend with full muscle beef and found it to be the best jerky I've ever tasted. This was after a less than successful experiment with a recipe I found online. I just finished eating the last of a batch that I made with this blend using ground beef and it was great too. I may add just a bit more pepper next time though. Next project, snakin' sticks made with ground turkey and a Hi Mountain kit. I'm itching to put my new Cabela's grinder to work.

I bought 3 different flavors to try for the first time, Original, Mandarin Teriyaki and Bourbon BBQ. I was very disappointed with the lack of flavor in all 3. Original had the most but the other 2 was almost non-existent and this was after letting the meat cure for 24 hours. Unfortunately I will be throwing away 2 of the flavors.

Packet has enough for 3 batches of 5lbs of meat, recommends measuring the separate cure and spices, but you should plan to do a little math and use a scale for better accuracy. It's a great product.

This is a good product for making jerky and sausages. I use it mainly for venison but have it with other meats. The sausage kits, you may need to adjust seasoning levels to achieve the taste you want. I use less meat to get a stronger taste in a few of the flavors I buy.
I made four batches of Hickory jerky using this kit and everyone who tried it loved it. Like seriously raved about it which made me happy. I use eye of round and slice it with a Cabela's meat slicer so I have consistent slices. I cure it with the Hi Mountain cure/spice mix and then dry it in a food dehydrator (Cabela's 10 tray). The result is really good and I don't even have to vacuum seal the jerky because it goes so quickly. The trophy wife brings it to her work and it's gone by morning coffee break. I took a batch to work and now I'm a legend, not that I wasn't before but now I'm more legendary. Hi Mountain makes it hard for me to be humble.
It is very important not to cut back on the amount of curing salt specified on the recipe as it is used to prevent the spread of bacteria and botulism that can cause poisoning and or severe illness.

I have used High Mountain Jerky Cure for years. Directions are easy to follow. I make my Jerky in the electric oven. Although I do use a lower temp then suggested. I set mine at 175 degrees. And crack the oven door with a spoon handle. Usually start removing the smaller pieces around 3 hours in. 5 hours max for thicker pieces. Turns out great every time.
The downside I see is the cure and seasoning packages do not leave the meat entirely flavored throughout the meat. Mixing and cutting meat as per directions left it a bit unflavored as far as I am concerned. That said, I simply added some liquid smoke and soy sauce to the meat and it came out really good, and not ear as much as I'd normally use. I will purchase this again as I like using a curing agent on it other than just salt (typically I use Lawry's Seasoned Salt). With this product and some additional soy sauce/liquid smoke, the jerky comes out flavorful (throughout) and is not too salty. The only one I've used so far is the Mandarin Teriyaki, however will be using/trying several others soon. Overall, this is a good product, not perfect, but I'll use it a lot ... I have eaten a lot of jerky in my life. I started making jerky and did up marinades, they were pretty good. But then I got a variety pack for Christmas, and this stuff is amazing. I keep getting told its the best jerky they have ever had. People wanna pay me to make it for them. Could be the meat I use or my smoking technique, but it is darn yummy
