As a dark chocolate lover I tend to tap out at 70%. I've found that even really great makers don't taste as great at the 80% mark.However this 80% block is very, very good. It does not taste heavy and does not have even a hint of bitterness. Instead there is an almost biscuity sort of aftertaste.I more or less cut my teeth on artisanal european chocolate and single origin criollo bars, so that's the standard that I'm holding this too. It's very good
