I don't know how I ever lived without this skillet. It cooks like a dream. It is the perfect size for every day use. It's heavy (like all cast iron) but manageable in this size. It cooks really evenly with no cold spots. It's material is naturally nonstick which is awesome. Cleanup is very easy. It goes from stove to oven to table which is great. I love the way it looks and you can serve in it as well and makes a great presentation. You can use it for many things but I absolutely love cooking eggs in here. Le Creuset is my favorite kitchen brand. Even though it can be pricey, it's worth it because it just performs better than anything else. They also have a limited lifetime guarantee which is nice to have!

I was so excited to get my first Le Creuset pan. I have a Staub Dutch oven but also wanted an enameled cast iron skillet to replace my old nonstick pans. This pan is almost as nonstick as Teflon but without the harmful chemicals. I do have to use butter or oil but not much. The black enameled interior is perfect for browning. Always remember you will likely never need high heat with cast iron. Just preheat the pan, with fat, over medium or low for long enough to get to the heat you need. Never use metal utensils - wood or silicon/plastic only. And no scouring. If food is stuck just soak it for a bit. If you follow the instructions the pan will last forever.

Its not as Le Creuset used to be. Its horrible. Sticks on every usage . Its a mistake to buy this. I have Le Creuset baking sets and which is wonderful. But this one i don't know now what to do.
The 10 1/4 skillet is great and what we needed to complete our collection of LeCreuset cookware. The color saturation on the handle wasn't the greatest which is the only reason for the 4 stars. For cookware of this quality and price point the Q/A of the skillet handles have been challenging even after multiple returns/exchanges. In terms of usage, as with any of my LC cookware, the challenge is cleaning it. I love that its dishware safe but still requires a bit of rubbing/cleaning. In terms of size, we use it to cook large pancakes, scramble 8-12 eggs with ease and fry such as andouille. I find it tough to fit large flour tortillas shells for quesadillas in this size, so I use my 11 3/4 LC pan for those with much better success.

Needs a little time to heat up, but this skillet is unmatched in it's ability to provide even heat. Perfect for sautéing and stir frying, and browning food (Maillard's reaction). The key to using this implement is that you need to heat it on low heat for some time and let it 'build' up the heat. It is a heat buffer. You cannot supply heat and transfer to food simultaneously. You need to build heat in it first, and that too slowly. What that does is that it heats up the entire pan. And that heat spreads uniformly. After that, this pan will remain hot for a long time. You continue to heat at low to medium low while cooking. The heat will be uniform and sufficient. How hot you want is controlled by how long you let it heat before you start cooking. The heat will be uniform and sufficient. How hot you want is controlled by how long you let it heat before you start cooking. For most sautéing you don't need too long. For extra hot, you can heat it up longer, but don't over heat it. Keep sensing from the sides (on the inside). If it is warm to touch, the pan is hot enough for moderate cooking. If it is hot, that means the pan is hot enough for stir frying and browning etc.Never heat it at high or even medium high. These cast iron utensils are not meant for such use. Beautiful functionality if you know how to use it.
I bought this for my daughter’s wedding shower. Both Alexis and her fiancé are still raving about what a fantastic skillet this. Given that I am not one for cooking, at all(!), I was somewhat shocked. But, she had requested that I purchase from the selection of cookware. I have to admit that I was somewhat surprised by the price for one skillet. Apparently, as I have subsequently been told by my friends and daughter, this is the ‘rolls Royce’ of pans! The sales people at Bloomingdales were also tremendously helpful and genuinely seemed to be excited about my selection. And, here I was going to buy a couple place settings of her fine China!! I will be back for that sometime soon, though— I still need to throw my shower for Alexis.
Very disappointed in Le Creuset. Purchased Signature Cast Iron Skillet due to reviews ignoring negative ones and regret it now. Poached eggs stick each and every single time no matter what oil or spray I use. Very disappointed especially considering the price point. Other Le Creuset items purchased are amazing. Beware of the enameled cast iron skillets/"trust" the reviews. Would definitely return.
I was so excited about trying Le Creuset. I wanted a way to make eggs every morning that didn't involve teflon. I struggled with this pan far longer than I want to admit, over 2 years! No matter what I did, no matter how much better or oil or seasoning, no matter what heat setting from low to medium, my eggs always stuck and it was so much effort to clean. And the eggs would cook so unevenly, and get that over cooked taste. Ugh. I thought the cooking surface was enamel but I thinking it just means the outter color is the enamel. The cooking surface is a smooth cast iron that doesn't season well. That's just my expience. I gave the Le Creuset shallow fry pan a try and I'm so glad I did!!! I'm in love with the pan and it's designed for eggs-- beautiful, even cooking. ... MoreI was so excited about trying Le Creuset. I wanted a way to make eggs every morning that didn't involve teflon. I would say skip this pan and go with the 9" fry pan with the enamel cooking surface (white or cream color). Unless you want to bake a mini corn bread or maybe sautee something, then this might work. Depends on what you are looking for, but a fry pan with a sticking surface is useless in my world.
