I seasoned the pan using a very very light coating of safflower oil in the oven for an hour at 25 degrees above smoke point of oil and it has been wonderfully non-stick since. Passed the egg test (butter + egg = gliding egg around the pan). Have also used for 3 egg omelet and it worked perfectly without sticking. Provides great browning for things like onions. Would definitely recommend. Definitely get a handle cover though - it gets hot!

the only thing I can say is " I SHOULD HAVE BROUGHT THEM YEAR AGO". I HAVE THEM AT MY BUSINESS, BUT I DID NOT THINK MY WIFE WOULD OR COULD USE THEM. I WAS WRONG, ONCE AGAIN. HRE POT WAS TOO OLD FOR MY, SO I HAD A NEW SHIPMENT OF GOODS COMING IN. ONE OF THE PANS I ORDER WAS WRONG, I so I brought it home for my personal use. After seasoning, I cooked up a couple of New York strips steak. My wife watch how easy it was to cook in it and it didn't stick in the pan. She wanted some of her own. Needless to say, I paid for more then I wanted to. the pans works great around the houses, just like they do at the business. I do enjoy the carbon steel. buy them, they well last for ever.

Prompt delivery. Product as described. Requires thorough cleaning prior to seasoning. Instructions included for seasoning method using vegetable oil, salt, and potato peels. Three seasoning cycles allowed an egg to be cooked and flipped without sticking. I'm satisfied with this purchase experience.
Wow this is smooth, I seasoned it and it looks wet it is so slick. I used the salt and potato peels as they have on their site and did it twice. With the first use my sunny side up eggs slid right out of the pan. This is as nice as any non stick pan I've ever used. I've used cast iron for years and loved it, I can't believe it has taken me this long to find out about these black steel pans. Not planning in getting rid of my cast iron but not sure what I'll use it for now..... these pans are excellent. If you like cast iron you'll love this, treat it the same, never wash with soap. I'll use water and a scrub brush if needed, then I heat and oil the pan. Cast iron takes years to develop a non stick surface similar to this.
It works as it was intended to and I used it almost every day.
This is my second Matfer steel fry pan. I'm happy with it's performance but after cooking in it twice the finish/patina is very eneven. It remains to be seen if it will become more uniform as I use it.
I've wanted a black steel fry pan for years. I saw a video on Youtube rating the Matfor Bourgeat fry pans as about the best available and I made up my mind to go for it.As a pretty avid home cook I buy quite a few knick-knacks online from Webstaurant. They offer Matfor Bourgeat, but only in quantities of 6. I headed off to a few other sources including Amazon but, ultimately, got onto Ebay and found your listing.You made this easy for me. Thanks very much! I ordered on Sunday with estimated delivery on 8/25. We followed instructions to season with potato peels, salt and oil, and worked like a charm. Our new favorite pan (amongst several All Clads). Warning: acidity eats away the seasoning. Cooks Illustrated warned about tomato sauce, but we used lemon juice and the same stripping happened. Kereke's has the fairest price around and was good to us.
Very good pan to use every day. just take care of it. That pan will outlast you. I wish the handle was a bit longer on this 9 1/2 size .
