Make no mistake, this is a big, sharp chef knife that will slice to anything you put under it in short order.Incredibly well-balanced, premium material, non-slip handle, and heavy enough to do most of the work by itself. Just blade-grip it (really easy with the comfortable slope) guide it, glide it, and slice whatever. I have other chef knives. For some of them, I paid a small fortune, but in the end, they don't hold up forever and need constant sharpening. The Misen Chef Knife is the best I have had so far and I got it at a reasonable price. My only nitpick with Misen knives has to do with their handle, which is rather straight. A few curves would help with the grip, but this is not a dealbreaker.

The knife itself is great. The best I’ve ever owned so much so that I decided to buy a complete set of pots and pans. As well as the complete line of cooking tools. My only complaint is that the knife does not ship with a safe way to store it. A simple plastic sheath would have bumped this to a 5 star rating. The good news is that the knife performs like a dream. The cuts are completely straight and the edge retains sharpness very well. The fit and finish is something you would expect from something much more expensive. All and all I am very happy with my purchase and have recommended your products to all of my friends and family. Keep up the good work and perhaps consider including a sheath in the future.

In fact, a couple of reviews by metallurgists seemed to think that the Misen steel, AUS-10, was nothing particularly special and compared unfavorably with the steel used in many other brands. I have not used the knife enough to make a determination, and only time will tell whether I made a good decision or not.I should also note that the knife is not made in Japan, but in China. My understanding is that steel from China is not generally well-regarded and is often considered inferior to steel from other countries, such as Japan and Germany. This leads me to wonder whether it will hold up or not, and the fact that it is manufactured there makes it's quality immediately suspect.One review, which I thought was fairly balanced, concluded that at the price point it sells for, it's a fair deal and should do the job fine. For now, I am adopting this view. As I use it and re-sharpen it, I will have an opportunity to better evaluate it. I am happy with its performance thus far.
I love my new MISEN chef’s knife! Was at first concerned about the size thinking might be too big for my small hands, but no it feels great! Feels great in hand, and as someone with carpal tunnel I find it easy to use without causing me pain which is important for me because I use my chefs knife daily. I found MISEN from Pasta Grammar, and so glad I looked into them after seeing how much they and their family loved them. Definitely plan on growing my kitchen ware, mostly replacing old with new, with MISEN. I went with the pretty blue color and it fits perfectly with my kitchen decor so that’s even an added bonus! One of the most important things for me about this knife however is that it’s full tang!!Look forward to working with MISEN more in time!!

The skin slid right off with almost no effort on my part, and every use since then has been similarly pleasing. I’m an avid home cook and my cousin recommended Misen to me. I started with three knives and found them to be high quality at a reasonable price. I’ve since bought another knife, kitchen sheers, wok, and oven steel. Everything I’ve purchased is high quality and a great price point. You can spend a lot more to get comparable items, but since being introduced to Misen, I start here. They also have fantastic customer service. I recently had an issue and Julia from customer service was able to promptly help me and correct the issue. I really appreciate getting prompt thoughtful customer service, and she delivered.
