This isn't a huge deal, but I think Ooni should be honest about this flaw and either design a fan to go with it or to offer one that fits to it as an accessory and be clear that it is needed when cooking multiple pizzas, like for a family dinner.

Just as you are hoping to, I wanted to love the Ooni Fyra. Ooni have done a huge amount of innovation as a company, their products look great and I wanted an oven where I didn’t need a gas tank. But… there are some key design flaws. The metal flame deflector falls off regularly (it could be on a hinge or fixed but isn’t). The chimney seizes and can be easily overtightened making it less portable than claimed (I can’t even over tighten a jam jar so no idea how I managed it). The opening for the pizza stone is so narrow that if you can get it out at all then you will be scraping the oven sides or risk dropping the stone. The idea is great. But it is really difficult to make pizza in these. The dough gets stuck every time inside the oven and you have a difficult time getting the pizza back out, often ruining that pizza in the process. We’ve tried flour, corn meal etc, but it’s still a giant pain. We have worked around this by cooking the dough in the oven first and then putting toppings on and then cooking again, but even still it causes issues sometimes. If cheese or any toppings fall off when sliding the pizza in, it becomes harder to get the pizza out. When you open the front cover, flames will often pour out the back of the oven which does not seem safe. I like that it uses wood pellets and is more or less easy to start and get heated up. Sometimes it falls out when pulling a pizza out and then you have this 900 deg F piece of metal that you have to move out of the oven and just leave it out for the rest of the time. I’m not sure what it even does or if it’s important, but seems like it should be a built in piece or attach tighter so it doesn’t just fall out. Other than that I like the oven.

We have wasted a lot of money on burnt and undercooked, sometimes on the same pie, pizza. We have used the pellets that come with it and premium pellets from specialty stores. It gets to 900° quickly and drops to 300° just as quick. The pellet bin clogs up and you need to poke them into the burn chamber. Too many pellets and it snuffs out. Too few and it burns out. It works if you add a tablespoon of pellets at a time at just the right moments consistently. Be ready to stand next to it and do nothing else. This oven is great for the home chef and DIY enthusiast. I prefer to use mesquite or cherry wood pellets as they burn hot and keep the temp above 900 degrees for 15 minutes per hopper fill. The stone does not need to be this hot, only 850 ish to get the toppings cooked and keep the bottom from scorching. I use a sourdough pie in mine with pretty good results. A proper poolish or Bigga is really where the flavor is at by they both take much longer to proof. The recommended turn time, per the Ooni essentials PDF, is to rotate the pizza every 20-30 seconds but this is even excessive and results in the outer crust burning significantly. I found the crust burning even after 10 second rotations. The oven temp was 400º celsius at the stone centre but it seemed that the oven was much hotter and resulted in the pizza burning. I guess the one upside is that I cooked (and burnt) my pizza first which lowered the oven temperature enough so that my wife's pizza, which was cooked directly following mine, came out with only minor burning.It appears that the proper oven temperature should be less than 400º celsius, perhaps 350º for the pizza dough to properly cook without burning. But this is difficult to achieve since there is no easy way to regulate the temperature. Per the Ooni essentials PDF, the only way to lower the oven and pizza stone temp is by using a cast iron frying pan or skillet and placing it inside the oven to absorb the heat. This may be a viable solution to the problem but not an ideal one. I will attempt this on my next pizza effort to see if it will actually work as expected but as of now the entire experience has been less than enjoyable.A note of caution: Should the pizza dough stick to the peel then care should be taken getting it to slide into the oven as exerting effort to get the uncooked pizza off of the peel can result in toppings sliding off onto the pizza stone. This will ultimately cause the toppings to burn and stain the stone and you will be left scraping the stone with a wire brush in attempts to get the stone clean for the next pizza.For me, I think that the gas oven would have been much better choice since you are able to regulate the flame to adjust the temperature. The gas unit is more expensive that the pellet unit, almost double, but that seems like the proper way to go if you are serious about making pizza.

I finally pulled the trigger on this one because of the price point and the fact it uses wood pellets for that extra flavor. I will say, there is a learning curve, even if you are savvy with the art of pizza making. There is no doubting these units have a premium price tag, and for that price, I would expect it to come with everything to get started. Anyway, for a successful start, plan on buying pellets (I used a competition blend I use in my smoker), a small hand torch to light the pellets, a pizza peel, and an infrared thermometer. You will also need a surface to put the oven on with plenty of space around it as it gets HOT. My second complaint is the oven door has a super tiny hole which makes it kinda difficult to monitor the progress. They have other ovens with clear doors, not sure why this one didn't get it or the option to buy it separately. Overall, I do enjoy the oven and can look past the couple mentioned issues.
