Originally founded in 1947 as a union of local cooperatives, today the company is based in the village of Pyrgos, on the edge of the volcano's caldera. In the modern cellar, built in 1992, the company, which represents all local vine growers, produces high-quality wines according to the island's traditional winemaking techniques. The Assyrtiko grapes, the most representative white variety of Greece, come from vines that are 60 to 80 years old, located on the island of Santorini. After a short maceration on the skins at low temperature, fermentation and refinement take place in stainless steel to guarantee the full expression of the grape’s aromatic profile. The wine has a bright and clear straw yellow color. On the nose, it reveals a fragrant character with aromas of citrus and stone fruit, mineral and salty hints, and some light nuances of honey. On the palate, it is dry and thirst-quenching, with a strong mineral streak and a good acidic backbone. The finish is long and lean and recalls mineral hints. This is a great example of Assyrtiko wine, and fully expresses the typical character of this vine and the island’s terroir. It makes a great summer aperitif, and it's the perfect wine for fish and seafood.
