Wusthof Classic Ikon 7 in. He Nakiri
Wüsthof Nakiri, Classic Ikon (1040332617), 17 cm Klinge mit Kullenschliff, geschmiedet, Edelstahl rostfrei, japanisches Hackmesser für Gemüse The Wüsthof Classic Ikon series combines perfect ergonomics, excellent balance and exceptional performance for a true culinary experience. With its modern design and contoured handle, this razor-sharp Nakiri is the one you will reach for time and time again. The Classic Ikon 7” Nakiri is designed with a thinner blade, this Japanese style knife is the perfect tool for chopping any amount of vegetables or fruit. The hollow edge is crafted with evenly spaced vertical indentations, which create small air pockets between the blade and the food. These small air pockets gently push food off the blade and reduce friction and drag. The Classic Ikon Nakiri allows cooks to effortlessly prep a wide array of fresh produce, even starchy vegetables like potatoes, which tend to stick to a knife’s blade. Each Classic Ikon Knife is forged from a single block of High Carbon Stainless Steel and tempered to 58° Rockwell Hardness for lasting edge retention, integral blade strength, and ease of maintenance. The Precision Edge Technology (PEtec) yields a blade that is 20% sharper with twice the edge retention for a knife that will last a lifetime. Wash by hand only. Family owned for seven generations, Wüsthof was founded in Solingen, Germany over 200 years ago. Wüsthof’s cutlery carries the Solingen name, a designation reserved for products that meet the strictest quality standards.

Love it! Cuts like a breeze. I also noticed I did not need to "learn" how to use it. The motion is straight up and down cutting which I feel is more natural to me. With the Chef knife you use tip to shank and that doesn't feel as natural. I like the blade size and it also seems to deflect the vegetables off the knife as I cut which was a problem with a Cooks knife that was similar. Very happy with this knife.

This is the best chopping knife I have ever used. Even though it looks large it is very lightweight and balanced. When I used to cut peppers with our chef knife, I would sometime have to use some extra force to get through the skin. With this knife, it just chops through. Highly recommended!

Wusthof nails the formula here with these knives. I tried this one (Nakiri) and the Santoku version. This one has a nice long, blunt-end blade that I find ideal for chopping and dicing veggies. Mine is crazy sharp. Most of my everyday knives are Wusthof Classic and this improves on their near-perfection. The weight feels perfectly balanced. Very predictable and accurate. The handle has a subtle curvature that makes it very comfortable for me to hold (ymmv, of course). And the design is handsome. I paired these with a clear knife block and they're really striking even when not being used!

I've used this knife for about a half dozen meals so far and love it! I actually prefer it to our Wustof Ikon chef's knives for most prep now. I really like how the tip is curved slightly for rocking back and forth. A great addition to our set!
The Wusthof Ikon 7 Nakiri Knife has been a great asset to my kitchen. It allows for a comfortable grip and is a good looking knife. In my opinion, it is not the best knife, but yes it is good. My knife wasn't really ad sharp as I was expecting. Nevertheless this is a good knife. I would be open to continue trying other items from their brand.
Sharp right out of the packaging. Cuts through any food but especially effective on fruits veggies and meats. Great weight and balance between blade and handle.
Sharp, good balance, high quality knife. The food doesn't fall away from the knife as much as I had expected, but it's not a dealbreaker. It's so sharp, I am actually a little afraid of it, considering how clumsy I am. But I think it'll prevent unwanted slide off from food, like when slicing onions or tomatoes. I actually have a Chinese butcher knife that I've used for years. The Nakiri knife will be a nice smaller addition for everyday use.
I purchased the Classic Ikon 7" Hollow Edge Nakiri one year ago. I use it almost everyday. Pros: Good for hard foods, sharp, keeps and edge, well made, looks nice. Cons: Not good for chopping, hollow ground is still stickier than other hollow ground knives.I use this knife primarily for cutting hard cheese and salami. When cutting cheese especially, using my hand on the squared off edge is more comfortable and confident than the sharp point of a chefs knife. The knife can slice bread and cuts softer (ie. uncooked) meat easily - although I typically use the serrated knife or the chefs knife. If I am chopping vegetables, I grab the 9" chefs knife. I don't do decorative chopping, but this could be a pretty good knife for those techniques. After a year of ownership ... MoreI purchased the Classic Ikon 7" Hollow Edge Nakiri one year ago. Our favorite Nakiri, and that's saying a lot. I've got at least 5 Japanese Nakiri from Mago Roku to Shun and this is the winner.
