After seeing the hype I decided to research and find the hexclad piece that felt like the most bang for my buck. This inbred wok did not disappoint, in any way! It’s light, but sturdy and well constructed. It heats quickly and evenly, but cools for cleaning and handling remarkably quickly. And I’m able to achieve a beautiful sear that’s hard to match on any of my other cookware. This wok was worth every penny and has me already planning my next-clad!

The center part of the wok has non-uniform pattern and lacks the silver "hex" shape dots elsewhere has, fresh out of the box. I contacted Hexclad multiple times trying to get a replacement and they claimed it is normal and it" It appears there is some food grade oil remaining on your wok. I have now used the Wok 4 times within the last 10 days on an induction range. I followed the seasoning procedure according to the instructions. I also used low to medium heat as instructed for the first 3 times. On the 4th time, I cooked lamb burgers at 375 degrees and when done, there was quite a bit of residual that required serious scrubbing with the rough side of a blue sponge. I was a bit disappointed considering the cost and hype about the pan. I do use a steel wok which requires the use of oil, but it performs well over high heat. In my opinion, a wok should be capable of handling high heat, and I'm afraid the Hexclad Wok will require the use of oil, just like any other much cheaper steel wok when cooking over high heat.
The term hybrid applies both to the stainless/nonstick surface, and to the shape and proportions of this cooking vessel. Although it's too shallow to qualify as a traditional wok, it serves pretty well in that role if you have to make do with an induction cooktop. Obviously, you can't flambé the food as you can with a giant gas burner, but for all the other stir-fry techniques, you can make it work. For modern, reduced-fat, fusion cooking, it's really pretty good. With the tight-fitting lid, it works very well for steaming. The combination of steel and glass in the lid makes it click and pop periodically, as the two materials expand and contact at different rates as they heat and cool. It's annoying, and sometimes quite loud, like a kernel of popcorn popping and ... I received this wok on 12/13/2023. I only used it 4 times. The 4th time, I tried to clean the bottom of the wok due to there were some over-burned food stick at the bottom. I then found there were some white color showed up at the bottom. The more I tried to remove the white stuff, the more I realized it was the black coating gradually removed from the work. How could the black coating easily to be removed from the normal cooking? I need to either get a refund or get a replacement. Please check my shipping, I only got this wok on 12/13/2023. It was only less than 3 weeks ago.

Inside was this gray type bag which had the pan and the instructions. One received just the bag and the pan plus half the instructions. Yes I said that just the bag No box. Sent from California across the Country to Indiana. I am not sure if this was a return thats why there is no box. Or it was setting in their defective pan section. Oh but it gets even better. One family member received the pan in the gray bag. No Instructions No box nothing! Same thing was this a return or defective where is all the stuff that comes with this pan.
