It would have been great to have clearer instructions on how to use it. There are some online examples but which one to choose? Also not necessarily good for Wheat intolerance as it has wheat starch

Caputo Fioreglut Gluten Free Flour 1kg
The gluten free flour from Caputo is a type of flour that is well-known among professional chefs and bakers. This flour is a type of wheat flour that is commonly used in Italy to make traditional Neapolitan-style pizza. It is made from a carefully selected blend of high-quality wheat that is milled in a way that produces a fine, powdery texture. Caputo flour is versatile and can be used to make a range of baked goods, including bread, pasta, and pastries. The flour is known for its high protein content, which makes it ideal for making doughs that have good elasticity and structure. One of the unique features of Caputo flour is its ability to absorb water easily, which makes it great for making pizza dough. The flour produces a dough that is easy to stretch and shape, and it creates a light and airy crust that is crispy on the outside and chewy on the inside. Caputo flour is also known for its low ash content, which means that it produces light-coloured flour that is ideal for making delicate pastries and cakes. The flour is unbleached and untreated, which means that it retains all of its natural flavours and nutritional value. The flour is produced in a way that ensures that it is free from gluten and contamination, making it safe for consumption by people with celiac disease.
