I've owned so many pots and pans, made of so many different materials, from so many different brands. At this point, I have finally learned that everyone needs at least one Dutch Oven, but I couldn't stand how heavy (and expensive) the well-known brands are. This one gets good reviews by experts on traditional Dutch Ovens: they like how light it is and how well it conducts heat, but they don't like how slippery the non-stick coating is. When one of my kids goes to college, I will be gifting them a complete set. But I will be very jealous.

We have used it just once but we made classic New Orleans File Gumbo, which means one must slowly cook a 1/4 cup each of olive oil and flour for 30 minutes, stirring it frequently to make a very dark brown roux. Many pots cannot accomplish the making of a roux but rather wind up burning it. Le Creuset is fantastic for this purpose; however, we needed to replace our beloved French pot because a visiting "Philistine" trashed it by overheating the enamel. Caraway offered a far less expensive replacement so I decided to experiment with new technology. This pot is beautiful and on this first test scored an A+. It has great lines and looks great on our new black cook top. The interior did not stain and was quite easy to wash. I've used the coaster many times to set it down hot on my table or even move my poached peach dessert straight from the stove to the refrigerator.I've even used it on my induction portable stove to do hot-pot, and it performed very well (heats up super fast).What I like about the Caraway Dutch is it doubles as a stock pot too. I've made soup in it, although if cooking for 1 person you may want to use a narrower saucepan; the Dutch is quite wide, so it takes a lot of water to fully submerge anything you put into it.Cleaning is easy. It's very sensitive to temperature changes on your stove, largely due to the fact it's made mostly of aluminum and relatively thin compared to a traditional iron Dutch. You can go from simmer to scorching very quick (this can be good and bad, depending on your cook style). I've found myself babysitting the Dutch Oven to achieve the perfect simmer on a soup. The temperature margin of error is low, unlike with a cast iron which has a more gradual and forgiving temperature response. In one example, I had achieved a nice simmer on my soup and walked away for 1 minute, and when I came back it was boiling and I overcooked it. But this is not Caraway's fault --the trade-off is physics. You get a lighter and friendlier vessel (a traditional Dutch can way 10+ pounds at this capacity); the only trade-off is a more sensitive heating curve.
It is a pleasure to cook with this pot. It heats quickly, & it is easy to control the heat. The size & shape allows you to use it for a wide range of meals. I use it to make a lot of soups where I need volume & the ability to stir without everything over crowding. I love it for making my Christmas peanut brittle candy because the pot is thick enough to control the heat & allows for the addition of peanuts without over crowding.
My husband thinks I have learned a secret to better cooking and I have - Caraway!!! I cooked a roast with vegetables last week and it was better than any we have ever had before. The same goes with several other dinners I have made in this Dutch Oven. The best part is that with most meats, you can brown them and place them in the oven to bake and make amazing dinners. Clean-up is a swipe with a paper towel and a dip in soapy water.......even with cooked on meat juices.
I like this pot just fine but I don't understand the logic of a lid that can't be seen through. I knew what I was getting when I ordered it. This isn't a surprise to me but I have to say that the lack of a see-through lid had me hesitating for a long time. Ultimately, I didn't want to have to deal with the weight of a ceramic-coated cast iron Dutch oven so I caved in and bought this one. The Caraway Dutch Oven is beautiful. The non-stick is wonderful. Our problem is the base of the 6.5 qt Dutch oven is only 6 3/4 inches across. Our induction stove requires a 7 inch minimum base for the large burner, thus you have to use the smaller burner. Water never boils on the large burner and it takes 18 minutes to boil water for pasta on the small burner. The Dutch oven would be a much better product if the diameter of the base was the same as the diameter of the pot.
I bought this for making soups. My other old pot was scared and toxic. This one is so pretty and is great for making soups, or anything else you want to make. Some pots are thin on the bottom and can burn your food but this one cooks great. The lid has an opening for steam to escape. clean up is easy its non stick surface wipes up nicely. I highly recommend and the price is great. I am going to look into getting other cookware from Caraway as well.
I bought this fabulous Dutch oven to bake my Sourdough loaves in. It's perfectly sized, crisps the crust nicely, and with no Parchment or oils. The piece is very easy to clean. I've begun using it for stews and soups, too. Very impressive pot. Since, I've added the loaf and cake pans to my collection. They are all truly wonderful, low toxin products, and they're beautiful .
