I watched numerous videos before purchasing. I determined which modifications were needed immediately and which could wait. I purchased Lavalock BBQ gasket, Lavalock Black Foodsafe High Temp Adhesive, and Lavalock BBQ Door clamps. My 1st Time Use - Seasoning the grill had absolutely no smoke leaks visible to me. Temperature held constant for two hours(although higher than expected). Leveled off to relatively equal left and right temps after an hour or so(still to high). Smoke was extremely clean(See Madscientist BBQ videos on maintaining clean fire.) Overall, once I learn a little more about temperature control I expect to cook a perfect brisket. I bought this grill for a Fourth of July party and I was really excited for this purchase. We used it for the first time and immediately once used the bottom of the grill started to bubble and peel. After paying for this investment and for this to happen was very disappointing. I contacted the Char Griller and showed them these pictures and was told that it's not a manufacturer issue more of an overheating issue. This doesn't make sense because heat is going to be conducted in this unit and should be able to handle the heat that is inside. What is the point of a grill? 8 I am very disappointed in this purchase and now have an ugly looking grill that I don not want to display in front of people. It looks like I have had it for years.

This was purchased as a replacement for a different Char-Griller model (we no longer wanted the propane option). Before the first use, we watched reviews and read about best practice for care and use of smokers. We are hoping that with extra care this will last years. One con, and the reason this doesn't earn 5 stars, is that the paint flaked off the smoker on the first use. Some high-heat paint should do the trick, so do yourself a favor and purchase some paint when you take this home. Happy smoking!

I bought this Char-Griller Competition Pro 8125 smoker a week before Father's Day 2020. I wanted a good beginner offset smoker that I can learn about smoking, use as a grill and not break the bank. Assembly was very easy. Took me about an hour to set-up. I took my time so I could apply the sealant and gaskets. You will need help attaching the offset. It's a bit heavy and awkward to attach yourself. I did not have any issues with paint peeling or bubbling while seasoning. I followed the manual instructions. Cons - •This unit leaks A LOT. Be sure to invest an extra $25 on sealant and a gasket to have minimal to no smoke leaks. Chargriller should have added gaskets for the door at least. Be sure to seal it, smoke will leak. •No Char Griller Signature ashtray in offset and/or main barrel. •No simply way or tool provided to help remove ashes from offset while smoking. •"Lid Stopper" does not have a cushion to absorb the weight of the lid. If you aren't careful, it will ding the lid and chipped the paint. I give this smoker 4.25 out of 5 stars. This could be a 4.5 easy maybe higher but when I must buy additional items (i.e. sealant, gasket) in order for my smoker to be better, it takes away from being a good smoker and making it a mediocre smoker. Don't get me wrong it's a really good smoker after I did all the modifications, but I hate that I had to modify it right out of the box in order to function correctly. Personally, I believe the gaskets for the lids should have came with the smoker because that is where majority of the smoke tends to leak. Overall the Competition Pro has some flaws but if you spend the extra $25, this smoker is great purchas

My family gave me this grill for Father's Day 2020. I bought this grill because I did not want to spend 1K+ on a custom grill. We are a family of 6 and this grill after several smokes & grills has proven to be a great value. I wasn't to crazy about the 3 individual grates as opposed to one solid. However, I have grown to appreciate this feature because if I need to put some more chips or coals on the grill, I don't have to disrupt the other meat. I can just remove one section. Overall I'll will give this grill the highest rating because as a consumer grade product, already it has exceeded my expectations. I know with proper maintenance these grills have longevity. My Father bought several during his lifetime and got at least 10 years of good usage out of each one. I oil my firebox and other components subjected to high heat after every use. I just received my cover from Char-Griller to protect my investment. As you read reviews, be mindful that these are not custom grill-smokers. They are not designed for excessive heat but if you follow the manufactures recommendations, you will get good results! I am impressed with this grills performance for the price!!!
I love this product but had to take one star off for the cooking grates which come stock with this grill. Not only are they hard to clean (diamond pattern is hard to scrub, snags wire brush), but they warp almost instantly with higher heat. They're fine when all you're doing is indirect heat/smoking, but as soon as you want to sear up a steak or cook some burgers, they're a disaster. That being said, this is a really solid smoker and once I purchased replacement cooking grates, this has worked for me perfectly. Brisket, ribs, pulled pork, chicken, smoked sausages, etc. It all comes out terrific and the temperature is easy to control/maintain. I submitted written complaints to Char-Griller about the Side Firebox along with other problems and was disappointed to learn that the Side Firebox problems are not warranty eligible. Purchased & complained 8/2018. Char-Griller advised that the Side Firebox has heat limitations. My argument to Char-Griller; if the Side Firebox has heat limitations, then this information should be communicated on product packaging so that Customers can make informed decisions - at the point of purchase. Out of the box the door to the main cook chamber did not sit flush at all but Bunnings swapped it out without any dramas. The second lid was also not flush but a lot better then the first and I was able to bend it to shape. Even with the doors flush this thing still leaks smoke from the doors and around the edges where the end caps sit on the barrel. I have found the temp difference between what that reads and actual grill level temperatures to be out by about 20 'FThe reason I scored it a three is I think it's a bit average that I had to do extra work on something that costs $600+ to get it to work right, but after looking around plenty of places, you're not going to get much higher quality then this unless you're willing to spend upwards of $3000.You still get way better flavour from this then you will from gas assisted or pellet fed, so not bad if you're starting off in the hobby of smoking meat.
So just did the first burn to season the grill and like many before me the paint started peeling as soon as it got up to temperature. I expected this and am not too disappointed. I just took my wire brush and started chipping away all the loose paint. Then i sprayed with vegetable oil to just add a seasoning layer to the firebox exterior. I'd almost suggest they don't even bother painting the firebox. Oil seasoning it will be a much better rust prohibitor then paint that is obviously not rated for high enough temperatures. It's an inexpensive offset so i knew from minute one what i was getting.

What I love about the side door on the fire box is, as I'm using charcoal for up to 12 hours (briskets), I can periodically open the side door and scoop out the ash into a large pot leaving plenty of circulation under my homemade charcoal box. I love this smoker and I believe I went the right way about setting it up. I will own and use this smoker for years to come as I've owned my first one for close to 12 years before getting this one. I did replace the charcoal grate once but now I use a charcoal canister to start my coals thus relieving the extra heat abuse from the grate. Remember the low cost on these products, what you're getting is a heck of a deal. When you want it to perform like one that costs hundreds and hundreds more, go ahead and spend a thou on something else, or, you can invest very little and get this to perform up to your standards! :)
