I have waited to review this Cuisinart Pro Series 11 set until I used it a while. I'm not a cook but I do appreciate quality. This set is quality. The main message from Cuisinart was not to cook on high heat. What they said exactly is: FOOD WILL BURN! It's taken me a while to learn, but I recently sauteed/stir-fried been on a 3.5 setting (out of 10)! The conductivity & evenness of these pans is awesome. It's easy to clean, heavy to carry (but not too heavy and the grip-handles stay cool no matter what). They're a joy and I recommend them highly.

The pans are lightweight, the handles Stu cool and the heating distribution seems to be well balanced. I use a gas stove. They do have specific guideline to follow to keep the pans in the best shape so I plan to follow those. I only wish they were made in America. We’ll see how this imported steel holds up over time. It washes up well for the most part, but I have noticed some marking on the inside from cooking acidic and meat juices in one of the pans - it hasn’t happened with them all. I usually rinse them immediately after use and hand wash them. I use silicone and wood utensils to not scratch the inside of the pans as well. All-in-all I am pleased with the purchase especially since I got them at a great one box price! FYI they were all still new and in original packing - I was worries about that! lol!

This cookware not only heats evenly but also shortens cooking time due to its construction. It pours smoothly due to the lip edge. I like the clear lids for assessing what is going on in the pot. This set of cookware has been faulted for not keeping its shiny new look. That is true, but anyone who really cooks will have pots that look like they are used. If you want shiny spotless pots, just hang your cookware on the wall and don’t use it. You won’t regret this purchase. I use mine on a glass top electric range. But I have ordered an induction range and needed this new cookware.

Used the 3 quart saucepan first to boil potatoes. When cleaning up after dinner after using the 3 qt saucepan had black pits on the inside on the bottom of the pan. I contacted cuisinart the following day. They offered to replace the pot, but with a lesser quality pot since the 3qt in the professional series was out of stock. On the following 2 days I used the 5qt dutch oven to cook pasta and the 10 inch skillet to cook salmon. They both had the same pits as the 3qt saucepan. Poor quality control, especially for an item that is supposed to be one of Cuisinart's top of the line cookware. Luckily I had not gotten rid of my old (12 Year) set of Wolfgang Puck Stainless cookware. Put it back in the cabinet and will probably use it until it falls apart.
After much research, I settled on the Cuisinart tri-poly set for my new cookware. It does not disappoint. The even heating is exceptional. The 13-piece has all of the must-haves for cooking that you don't really need any other items. As long as you follow the instructions that come with the cookware on use, case, and washing, you will have pieces that last.

So far, I've only used the small sauce pan/pot for my morning oatmeal. It heats up very nicely, especially considering that I don't need to go any higher than a medium flame (as the care and maintenance manual suggests). In the past I stayed away from stainless steel cookware because I too often saw how quickly & badly they get burned - even worse trying to remove/clean-off those burns. But now I know better as to how to prevent the burns and remove them. With that said, I have been impressed how nicely this pot can get & and stay clean and shiny. What makes it surprising for me is that I have literally only used a wooden spoon inside, and wood should not scratch. But other than that, I am happy with the set. I love everything about this set with one minor exception. I love that this set has exactly the right pieces in it for me, including the 6-quart pan--perfect for pasta. The bottoms hold heat well, and the sides seem to distribute the heat evenly. The only thing I do not like is that, for some reason, it's not exactly "stainless" steel: cleaning the interiors where fond has developed is really tough. I can get it so squeaky clean enough that I can feel absolutely nothing as I run my fingers over it, but I can still see a bit of discoloration where the sticky accumulation was... Any ideas for shining it up again would be welcome. Otherwise--perfect set for me. Love it.
Contemplating all the Cuisinart stainless sets and finally selected the Professional 13-pc set. Best decision I've made because you get everything you need. The handles and covers stay cool if you forget to use your potholder. Pans heat up faster and food cooks evenly! What a concept. Still keeping my Cuisinart anodized set for my husband and for making gravy for Thanksgiving.

The pots and pans are beautiful to look at; however, after using the 3.5 qt. saucepan the very first time, there were noticeable black marks inside the pan on the bottom as if it had been scratched or something.
