Seasoning this turned out to be harder than I thought. I did clean under hot running water, but I guess some of the wax was still on it? later after seasoning per directions, there were dark colored spots on the pan. Multiple seasonings seems to only make it worse. I may have to use harsh cleaners to start fresh.

This is a great fry pan. The deep "country" style makes is versatile on its own, and the two-helper-handle style (vs. long handle + helper) makes it even more so. This version can go on the grill or in the oven much more easily than the other. The 11" size is big and roomy without taking over the whole stove top.

I bought the pan specifically to be used on the grill to slow cook pork shoulder or Boston butt, and other larger cuts of meat. The shape prevents burning of the roast, and the heavy pan worked well to evenly distribute the heat, with nice browning on the top of the meat. the double handles work better than one long handle when used on the grill, as it takes less room, allowing another pan to be located on the grill for vegetables. Very pleased with the results. Plan on using it for 2 chicken breasts (with the bone and skin), in a marinade.

I have the 9.5” pan, perfect for one or two people. I chose the dual handle pan as it is easier to store than a “stick” pan and it can go into the oven without worry as the handles are stainless steel and have no covering. This is an amazing pan for stir frying and frying other things without much spatter. You won’t go wrong with this pan! I would like to purchase the 11” for larger amounts.
I bought the biggest one they offer with the two small side handles which makes it easier to handle instead of the one long handle. Having deep sides is really nice so that when you stir the food, stuff doesn’t fly out! Having the largest size also means your food isn’t crowded. We cook for two and it’s perfect! We did a stir fry the first time we got it and my wife says she doesn’t need the wok anymore!
My experience using de buyer deep pan is really good. First, it is not heavy, so handling and cleaning is easy. Once, I season it nothing sticks to the bottom, the key is to use medium to low heat. I saute my vegetables in deep pan, it is deep enough to cook large quantities. The vegetables taste amazing when cooked in iron pan. I can differentiate the taste between stainless steel and iron. Added iron to my vegetables is a plus.I enjoy crispy potatoes made in de buyer pan.
I bought this online as a Xmas gift for my wife. When it arrived I decided I couldn't wait the next three months for us to use it and reap the mouth-watering rewards of its use. So Christmas came early this year.After a few weeks of use we are extremely impressed with the versatility of this deep pan. If there is ever a mess, you can also deglaze it which only takes a few minutes. Lastly, I should mention that you need to take into consideration the difference between the top diameter and bottom diameter. If you buy an 11" pan, that's not the size of your cooking surface. I would recommend to Chef Supplies that they consider adding the bottom dimension in their product specs to help customers when deciding. For example, this pan has about an 8" diameter coking surface.
This is almost 6 pounds of French steel. Once it was cleaned and seasoned it has been a dream to cook on, and cleans up easily. The weight takes a little getting used to, and I have had to make some adjustments in terms of heat setting, generally using a lower burner setting than I would with other pans once it warms up. It's too bad the handle isn't oven safe, but I knew that when I ordered it.
