Also had an 8" and 10" chefs knife from Dexter Russell and they were work horses. Save your money, buy a good quality knife without the fancy German name.

Perfect tool to prepare veggies, chop garlic, etc. handles well, cleans up easily.
This was my introduction to high carbon steel and has been at every restaurant I've worked at since I had the pleasure of laying my hands upon it. It takes to a stone so well and the patina that it's formed over my 5 years of use have made me fall even more head over heels for this knife.
I came upon one of these knives second hand; even after constant use it still is a fantastic every-day and every-way type of tool for any kitchen.If you're cooking a meal or feeding an army, while you're doing so, it makes sense for this blade to, essentially, become an extension of your arm. Because there's, rarely, a reason to put it down.
