However, it's important to note that the size of tea particles, referred to as the grade of tea, does not necessarily correlate with its quality. Instead, it primarily affects the strength of the brew. During the artisanal tea processing, the leaves undergo various transformations, resulting in different grades such as OPA, Pekoe, BOP, or finer Dust or Fannings. These grades can vary from elongated and wiry to tightly curled or smaller particles. It's noteworthy that a single batch of high-quality tea leaves can produce several of these grades, all of which possess excellent qualities. The primary distinction among them lies in the size of the particles, which directly impacts the strength of the brewed tea. When brewing tea with hot water, the surface area of the leaf particles plays a crucial role in the extraction process. For instance, a teaspoonful of Dust tea can have up to four times or more surface area compared to an equivalent quantity of OPA. Consequently, Dust tea offers better extraction potential, resulting in a thicker and stronger brew.
