So, I am late to the game in getting this review out and to be honest - I'm not good and leaving reviews for companies/products, but I could not delay in telling you to BUY THESE PANS! We've had a hexclad pan for a couple of months now and it is the only one my husband and I reach for when we are cooking. I think the other pans are jealous as they rarely get used anymore. Funny thing, even though we have just the one fry pan - we will use it over any other pan now - even when it does not "fit" what we are cooking. My husband is notorious for burning proteins and smoking us out of the house - NOT any more. With this pan, he sears proteins perfectly every time. Don't be intimidated by the bad reviews if you know how to cook. I bought the 13 pieces I have at Costco, it is a 6 piece and 7 piece set combined, and I couldn't be happier. I followed the directions and seasoned them all. I am a foodie and love to cook all different types of food. I have used the Hexclad cookware exclusively for the last 2 weeks and have had literally nothing stick to them, not even eggs. I have seen many complaints about eggs sticking. I have made omelets, scrambled eggs and over easy eggs with no sticking. Yes, they are heavy. I have seen complaints about this, these are people that don't understand good cookware. Heavier pots and pans heat quickly and more evenly for much better results. Honestly, I hate pots and pans with glass lids because they have seams and crevices where the rims and handles attach that are hard to clean and drip water after cleaning. I saw these had glass lids and then saw some ratings that said the lids were cheaply made. I was nervous about this but, the reviews couldn't be more wrong. They are well made, they are easily cleaned and don't drip water after being cleaned. They also fit well so that is no condensation spraying out of the edges while cooking that I have seen with other glass lids. I replaced my main set of quality stainless steel pots and pans that I have used for almost 25 years with these. I also have a set of Le Creuset, I have uncoated cast iron, I have mineral steel pans and I can honestly say that Hexclad is the best set I have used so far.

I wanted a pan mainly for eggs. I have excellent pots and pans but eggs are a challenge. I am very pleased with the non stick for eggs and have made many meals with eggs since getting the pan for Christmas. It is HEAVY which I don't like and did not expect; very heavy to lift out of the cabinet so I have taken to keeping it in the top shelf of the stove. However, for other cooking I have to learn how to adjust the heat as it runs very hot in this pan. Just today I used it to make a ground chicken bbq dish I have made every 2 weeks for over 2 years and know how to set my burner temperature. It was so hot it was burning in the pan and I had to start over. I then ran the pan through my dishwasher since it says I can and the burn was still on the inside of the pan. I am mad at myself for not buying a HexClad pan before now. I have watched so many videos about them and read so many reviews but have never pulled the trigger. I went for the 12" hybrid stainless steel frying pan with the cooking lid. The flat bottom diameter is 9" which is exactly what I was looking for. Not too big for a flat glass cook top but big enough to make a lot of food at once. There are so many good things to say about these HexClad pans. They are non-toxic first of all which was the most important feature to me. They are metal utensil safe which is great because I can never get my family to not use metal in my pans. They are dishwasher safe, oven safe, induction ready and they have a stay cool handle. There are steel peaks on the surface of the pan(obviously tiny) and the valleys are a non-stick ceramic material(infused with diamond dust for extra toughness according to the company). I do not really understand how they did all that but I do know one thing for sure, which is that it works. I have never, ever, had a pan that worked as well as this. Not even on day one of a traditional non-stick pan. Absolutely nothing sticks! It does say you can clean it in the dishwasher but all you really need is a swipe from a paper towel. I don't know why you would bother putting it in the dishwasher at all. I have even thrown it under the broiler to brown cheese topping and it did not stick around the edges. You know what I mean about the edges. The area around the top of whatever you are cooking in that gets black and you have to scrub for ages. Worth the price alone for the time you save from not having to do all that scrubbing. I would truly feel guilty every time I used my old non-stick pan. I could see the scratches getting bigger and bigger and worried about all the toxins we were ingesting. I feel such peace of mind with this pan. I can't wait to get a small one for when I only want to cook an egg or two. Don't wait like me, order it!

I've never seen Gordon Ramsey back a pan or knives, so I was intrigued; could there finally be a durable pan that would last?! I wanted a pan that would hold up, that would last! I watched many online reviews and finally decided to purchase a 12in pan and wok. I watched all of the videos to ensure proper seasoning and use. I made social media posts as I attempted to use the pans and learn. Let's be honest, there shouldn't be a huge learning curve when using a frying pan, expecially for a veteran chef. After 90 days, I've had enough. These pans give a decent sear, but are NOT NON-STICK. Not even slightly non-stick. Really not what I expected based on the commercials. If you don't use some sort of oil you meal WILL stick to the pan. Even in the instructions with the pan it tells you to use oil, but the commercials are deceiving. However, I gave 3 stars because the pan surface does seem to be very tough and resists scratches, at least so far. Time will tell. But if you think you're gonna cook eggs dry and flip them like in the commercials, forget about it. I ... MoreReally not what I expected based on the commercials. If you don't use some sort of oil you meal WILL stick to the pan. Even in the instructions with the pan it tells you to use oil, but the commercials are deceiving. However, I gave 3 stars because the pan surface does seem to be very tough and resists scratches, at least so far. Time will tell. But if you think you're gonna cook eggs dry and flip them like in the commercials, forget about it. I seems like they are meant to be washed every time which unseasoned the pan. I really wish I hadn't spent $180 on this pan. I could have bought a lot of cheap non stick pans for that price even though I needed to by a cheap one about every 2 years

It seems to be a good, durable pan at this point, only with a few weeks of use so far. I am curious to see how long it will last. Definitely beautiful and I like the bottom being non-stick too. You definitely have to season the pan and then it keeps getting better and better as advertised...so far...than my first try with it with eggs, which would not slide easily without a spatula. Nevertheless, after several uses and sometimes just wiping the grease out of the pan when it isn't really dirty, the eggs slide around pretty good. It sears meat great and cleans up easily to looking brand new, but again this is only a couple weeks of use. The sides are a little steep for flipping food easily, or rather I personally find it a bit challenging in flipping food to cook the uncooked sides, but it's good for regular cooking with utensils. The heating up seems a bit slower than other pans I've used, maybe thicker metal. I cannot bring myself to use metal utensils with it even though you say they can be used--feels too wrong and I want it to last for a long time, so I am handling it with more care than it may need. Photo is first try with eggs that stuck a bit (but cleaned up easily) but now they do not after seasoning for a couple week and often just wiping out the pan.

TLDR: GREAT PAN!Story: Since April 2020, this has been my go to pan.My first use with this pan was to combine Alton Brown's approach to the Perfect Steak (https://www.foodnetwork.com/recipes/alton-brown/pan-seared-rib-eye-recipe-2131274) with Gordon Ramsey's method (https://www.youtube.com/watch?v=AmC9SmCBUj4) of basting with butter. The ScanPan made it 3 month before the teflon was burned and sticking with nicks in it's teflon surface, a tragedy. It warped, and It has a really thick bottom, more than most cast iron, imagine the apoplexy at finding this!The HexClad pan has held up well. Yes, there is a slight bow, eggs will not center. But this version of non-stick has held up, releases quite the same as a properly warmed stainless pan to which you add your oil and then food.Just this morning I made a hard scramble in the pan. First a preheat with water droplet vaporization check and then light oil, egg, a quick spatula chop and proper skillet toss for that perfect just brown, and served. Minimal remnants, WOW. For 2 years in, impressed.I was a line cook a decade ago, those pans are fired all day, and must be liberally oiled, and I can say this HexClad could trade places with them and stand the service, no question.Only gripe is the outside, where oil can scorch on, which might be an eye sore for those who present their pans in a hanging rack. It can be polished away with steel wool (yes I said it) if it's a problem, but the color of the stainless is more or less still stainless, if only a seasoned look of high heat on the bottom.Note that my egg this morning would have stuck and never flipped with the roll of my wrist had there been a sticky surface issue inside or on the edges of the pan.
