As many others have stated, the collar prevents water from draining quickly so water pools up in the sink (especially after dumping out a large pot of water). The company claims the design is to allow water to pool to act as a "cap" over the disposal unit to make it more quiet during use. The unit is already very quiet during operation, I feel that there is no need for this "water cap" to reduce noise even further. I much prefer a nice flow of water going down the drain as I am using the disposal. I feel this design restricts the water flow far too greatly.

We purchased a brand new Essential Insinkerator. The only way you can get food waste into the disposal is to use your hand or a utensil to shove it down. Amazing. Called customer support and they confirmed that this was in fact the way it was designed........... to restrict food from going down into the disposal. Has to be costing the company a bunch of money. We actually returned one because we thought something was wrong with the product. The second one is exactly the same! A $15 baffle absolutely ruins this product. There has to be other disposals that are quiet that don't require you to push food down into the grinder.

I installed a new Evolution disposal onto the flange of my old Badger model. Took less time than the suggested amount. However, the baffle on the old model was attached to the disposal. The new one was inside the new flange (which I didn't use since the old one fit the new model with ease). Its placement on the new flange was pointed up. One might think that in order to install it correctly, those points would be up. However, it became pretty clear they need to be pointed down into the opening. I came here thinking I'd purchased the wrong replacement baffle as it doesn't fit snugly and seems very thin. So thin I'm afraid it will get sucked into the disposal.After reading the reviews I get that this design may have been a compromise for those complaining about its stiffness. Or it might be a typical cost savings technique?My unit, Evolution Compact, came with a DVD video that explained things like hot water slows the drain, using a spoon to push food into the disposal, and periodic cleaning of the baffle.Shame people didn't know that and now we have an inferior product replacement.I strongly urge Emerson to bring back the superior baffle and call it HEAVY DUTY and post that old video.Luckily I saved the original.
I got this to replace the aging one that came with our Evolution Pro 1100XL.The new one is differently shaped, restricting flow, as noted here by many other reviewers.The new one is much thinner material and I suspect will not last as long.I cannot understand why they only sell poor quality replacement parts. I bought a stainless steel Evolution. I'm not a landlord swapping out a cheap rusting Badger with each tenant. I expect to be able to buy replacement parts for the life of the unit, which in the case of the Evolution Pro 1100XL should be well past 20 years. That this baffle is the only available replacement part is unacceptable.
Nothing goes down unless you push it through. Sorry, but that's exactly what our parent and grandparents always said not to do! I get that this pooling of water and stuff is a "design feature" to quiet the grinding, but it also makes the grinding not happen because notheig gets past the baffle.Also, the thing becomes disgustingly slimy and gross in just a coiuple of days, so you're constantly having to remove it and wipe it down, which is disgusting.And, finally, it degrades quickly. Which makes the wiping even harder because the degraded rubber gets all over your hands and whatever you're using to wipe it off.This item is an absolute disaster.
It's pretty, and this is probably the quietest disposal I've ever heard (or not), but this baffle was clearly not tested in a real life kitchen.The faucet fills the sink faster than the baffle allows it to drain. I'm also concerned that the slow flow is not adequate to flush the waste through the pipe, which will inevitably result in a clog. The result is that I tend to just lay the baffle in sideways to simply discourage the silverware from falling in rather than preventing it altogether. Water will not go down and my sink stopper no longer fits. With all the negative reviews you would think the company would maybe take notice and make so changes, but no, all I see is that "this is the way it works". News flash guys, it doesn't work near as well as the original part. Are there any original parts in the warehouse anywhere. If so, I need two.
I don't understand how a company that makes such an amazing garbage disposal can make such a garbage replacement baffle. The original baffle lasted several years that came with the disposal. But when it finally became so worn, I replaced it with an insinkerator oem baffle, and had to every couple of months because they will not hold their shape. The top part of the baffle expands so much that creates huge wrinkles so the stopper can't be installed. And the spaces around the seal traps food and unless you constantly remove and clean, it can become quite foul smelling. I've gone through probably a half dozen of these and am getting ready to try an off brand replacement. Obviously this is undersized compared to your standard 3.25 Diam. which I just wasted 2 hours of my life on. Where do you buy it. Don’t say Lowes. This a freakish size. Will the Danco work ? I have a evolution pro 750I only was able to find a reference to this quiet collar after downloading the manual. You need to put this info front and center.
