1/2 Speed is the Best for Kneading Dough!

I got this mixer primarily for kneading dough, but also for the occasional batch of cookies, brownies, or other desserts. I choose the bowl lift mixer over the tilt head mixer because of the 1/2 speed option for a slow kneading of dough and the slightly more powerful motor. The 1/2 speed works great for dough of various hydration levels including bagels and pizza dough. I do notice the motor staining a little, but not too bad, just enough that I’m glad I got the mixer with the more powerful motor (bowl lift). Capacity is plenty to make double batches. It easily mixes a batch of 8 bagels, but for pizza dough it really needs a batch of two pizza doughs or its struggles to reach all the dough to mix. Most pizza dough recipes I’ve found usually suggest making two pizza ... MoreI got this mixer primarily for kneading dough, but also for the occasional batch of cookies, brownies, or other desserts. Most pizza dough recipes I’ve found usually suggest making two pizza dough balls at once anyways. I love the color of this mixer too. Very true to what’s shown in the screen (pretty dark blue green teal) and is a nice splash of color without drawing all the attention. Fits nicely on my counter underneath the cabinets. Lifting the bowl to remove it is a little awkward since the lifting arms don’t lock down, only up. So when you go to remove the bowl the arms seem to want to hold on and rattle the whole mixer a bit. The attachments for mixing are super easy to get on and off. I’ve also mixed a 24 batch of chocolate chip cookies with the regular paddle and that works great - 1/2 speed again for adding in chocolate chips. Lever to raise the bowl is super easy to use and locks in to top position easily.

Great, not life changing if you just make bread

I bought this exclusively to make sourdough bread and while I'm happy with the purchase I don't know that it was worth the money. I've been making bread for several years always by hand and I've been forever wondering if a mixer would have made a different in gluten development to contribute to better raise and oven spring. The short answer is no, it does not. Especially with SD and long bulk, gluten development isn't that much different. This is especially true if you use a fair amount of whole grains (20% or more). Also the bowl isn't huge, the hand kneading gets more difficult with larger amounts of dough and I was hoping the mixer would take help, but you can't really put that much more dough in it so in the end no real benefit there either.I was also hoping ... MoreI bought this exclusively to make sourdough bread and while I'm happy with the purchase I don't know that it was worth the money. The leaf attachment will get plenty stuff stuck to it and require thorough washing.Where this shines and makes a big difference is with enriched doughs, like brioche breads, where you need to add a fair bit of fats like butter. Mixing this by hand is quite annoying and you can't do it in the bowl like you can with simple bread doughs. Having a mixer with its own bowl definitely saves from a messy table to clean and greasy hands. All in all the product is good and if you do a lot of cookies and wet/enriched doughs (or perhaps other non bread/baking things), it's a good addition to any kitchen. But if you are wondering if you need this to make sourdough bread, the answer is, most likely not.

I’ve had this for two years now and it does not live up to the kitchenaid name. The most glaring part is trying to figure out how to attach the bowl to the mixer. Once you get it, it is easy but you have to figure out exactly the order to put it on and the perfect angle that isn’t too high to miss the back stop and isn’t too low that it won’t go over the side hook. Once you figure it out, it stops being as big of an issue but after two years it is still sometimes something I have to try two or three times to get just right. However, the worst part about this mixer is the motor. It is very weak and cannot handle even the softest high hydration dough without sputtering. The motor comes on just to mix the flour and water with only two cups of flour and a cup of water ... MoreI’ve had this for two years now and it does not live up to the kitchenaid name. Once you figure it out, it stops being as big of an issue but after two years it is still sometimes something I have to try two or three times to get just right. However, the worst part about this mixer is the motor. It is very weak and cannot handle even the softest high hydration dough without sputtering. The motor comes on just to mix the flour and water with only two cups of flour and a cup of water and it still sputters. This sputtering wouldn’t be bad if it just slowed down and then went back to normal speed when it hits a snag, but no, the motor decides it needs to make up for the slow part by accelerating to high speed quickly to make up for being slow. This results in any unmixed flour to be tossed into the air all over the counter or anything nearby. I’ve tried for two years to fix this by adding flour slowly, stopping the mixer between adding, changing to a higher speed, changing to a lower speed, and just dumping it all in at once and nothing will fix the sputtering and shooting flour out all over everything. Even once the dough is mixed and I bump the speed up the sputtering persists. This could be a byproduct of it being purchased during the Covid shut down but the quality is that of an extremely cheap mixer I could have just gotten for half the price. Kitchenaid was made famous for its amazing motors that last a long time and power through even tough doughs (we used these in soil labs to mix dirt and water) but it seems the brand has forgotten this.

So happy to be back with a KitchenAid stand mixer! This is my second, with a generic version (regrettably) in between the two. This mixer is so quiet, most people in the house don't even know I'm using it. It mixes & kneads perfectly, making double batches of most things pretty easy. That said, I'm disappointed that KitchenAid has reduced the quality of their product in so many ways: First, the logo has been removed from the attachment cover plate, along with the hinge that kept it from disappearing into coming space; Second, no timer or pause - not even a pause switch (although a 1/2 speed switch has been added); Third, absolutely NONE of the bowl accessories from my previous machine will fit this - meaning everything from a pour shield to a smaller bowl size must ... MoreSo happy to be back with a KitchenAid stand mixer! Look, I love the machine.... but for the price, KitchenAid has certainly cut far too many corners. A marketing decision that will end up costing their niche in the mixer game. (Also planned to add some photos, but it was not switching to camera mode on this form.)

6 September 2024

I've always heard great things about KitchenAid products, but it wasn't until I finally took the plunge and bought the KitchenAid Stand Mixer that I truly understood why it's considered the gold standard in the kitchen. From the moment I unboxed it, I was blown away by its sleek design and robust construction. But the real magic began when I started using it!This mixer has transformed my baking experience. I've made everything from delicate meringues to hearty bread with ease, and the results have been consistently exceptional. But what truly sets KitchenAid apart is its versatility. With the wide range of attachments available, this isn't just a mixer—it's a complete kitchen assistant. I’ve been able to make homemade pasta, grind my own meat, and even spiralize veggies, all with one machine. It has sparked a newfound passion for cooking and experimenting with recipes. On top of all that, the KitchenAid mixer is incredibly easy to clean, which is a huge plus for someone like me who dreads post-cooking cleanup. The bowl, beater, and other accessories are all dishwasher safe, making the entire process hassle-free.In short, the KitchenAid Stand Mixer isn't just a purchase; it's an investment in culinary creativity and confidence. If you're on the fence, take the leap—I promise you won't regret it. It’s worth every penny and more!
