Mercer is a brand that I can trust when it comes to knives. First of all, the metal blade is from Japan so I think it's high quality. Secondly, the price is affordable for its quality. As long as we take care of the knives properly, it can last for years. Have hundreds of knives, and Mercer knives are one of the most durable for its price. Highly recommended for cutting vegetables because of this forward back motion handle. Fits well for an Asian sized hands.

This line of knives from Mercer are very exceptionally priced for the quality they deliver! I currently own the Genisis 8" Chef's Knife and the Genesis 8" Usuba, both are perfectly balanced with solid weight which creates a wonderful hand feel and delivers great stability while making cuts. I use these knives for pretty much everything on a daily basis and have yet to find any complaints. While exceptionally sharp out of the box, they are also very responsive to sharpening and honing after continuous use making them just like new again. These knives are real work horses and are very reasonably priced. I DEFINITELY recommend this line of knives to anyone who needs a comfortable, sharp, and durable utility knife that is perfect for home or commercial use!

Mercer is a brand that I can trust when it comes to knives. First of all, the metal blade is from Japan so I think it's high quality. Secondly, the price is affordable for its quality. As long as we take care of the knives properly, it can last for years. Have hundreds of knives, and Mercer knives are one of the most durable for its price. Highly recommended for cutting vegetables because of this forward back motion handle. Fits well for an Asian sized hands.

This line of knives from Mercer are very exceptionally priced for the quality they deliver! I received this exact knife in my kit when I went to culinary school and so when I needed an additional knife it was a no-brainer of which type I was going to get. This was the best price that I could find anywhere. The textured soft grip is comfortable and doesn't slip from your hands. The blade holds an edge well with regular maintenance. I highly recommend this particular knife and this brand.

I gotta say, these are my favorite knives. I purchased these for our church kitchen because of the price and the reviews, and then purchased a few for my home. I have other brands at home, and I consistently reach for the Mercers over any of these others. They hold their edge, are extremely sharp, and well balanced. I simply make sure that I use my hone on them before each use. Can't beat these knives for the price!!

I have an astounding amount of knives scattered throughout my home and inside my knife bag. When I say that this knife is among my favorites, I mean it! This knife cost around 40 dollars at the time I got it and can easily stack up to some of my $300+ knives I own. I am a huge Mercer fan mostly because of how well put together their products are. I have owned this knife for going on 3 years now. I have taken care of it well, washed it by hand and honed it on a steel after every use. This blade has kept incredibly sharp and straight to the point where I have never had to put in to a wet stone. This knife is always one I recommend to new cooks in the kitchen not just because of how affordable it is, but because of how durable it is as well. I rarely find myself struggling with it and never regret picking one out. A solid 5 out of 5 for me!

Great Quality for Price

I was looking to buy another Victorianox Fibrox Chef Knife as a gift, but this was on sale at the time for a bit less and I thought I would try it out. Time may tell another story, but so far the knife appears to be of a better quality metal than the Victorianox and in general feels of a higher quality and weight and balance than the Victorianox. I will update this review when I have a better sense of how it keeps its edge over time and how it holds up overall, but I am very happy with this blade.

Nice knife for the price. German steel assembled elsewhere. The size is a rarity. Mt chef hands as well as my wife's smaller hands both love it. Only one other company makes one that size. At twice the price if you ever see it. The rubberized handle is something else most like.

Knife handle is a somewhat non-slip grip. I don't have to dry my hand every time I need to use it. Even when my hand is a little oily from prep work, I can hold the knife pretty firm with out it slipping and cutting me. Blade holds an edge relly nice. I had the factory edge replaced with a smoother edge by my knife sharpener, now I just run it over my steel to keep the edge. I have one at home and one in my knife bag at work.

I have several Mercer knives in my kitchen drawer. I bought my first Mercer while attending culinary school and absolutely love them. This knife is made from German steel and has a comfortable rubberized handle. You could easily spend three times as much money to get a quality knife like this.
