From the blade to the handle, this Miyabi Santoku knife from the 5000MCD series is unique. The natural structure of the Masur birch used in the knife handle gives the knife a distinctive appearance, whilst the fine damask structure of the blade is reminiscent of the swords from Japanese stories with100 layers of steel surrounding a core of MicroCarbide MC63 powder steel. The classic Japanese Honbazuke trigger makes the knife edge particularly sharp. Even in the 21st century, this relatively complex process consisting of several grinding passes is still performed by hand to obtain an authentic result. Blade core made of MicroCarbide MC63 powder steel embedded in 100 layers of steel for exceptional hardness of approx. 63 Rockwell (international standard unit of measurement for hardness) and outstanding cutting edge retention. CRYODUR ice-hardened blades provide particularly good cutting edge retention, corrosion resistance and optimum blade flexibility. Authentic Japanese blade profile The symmetrical blade with ultra-sharp Honbazuke edge ensures incredible sharpness. A beautiful knife. Japanese aesthetics and function combined with German production quality. The broad but thin blade is brilliant for vegetable preparation and fine work.It is superior to any of my reputedly high quality European knives to the extent that I will probably never buy another western style knife.If you enjoy cooking and appreciate fine quality and workmanship, this knife will make preparation a pleasure; as it has for me.

These knives are as sharp as they are beautiful. The fit and finish couldn't be any better. I couldn't believe how easy it was to slice 2 whole eye of round roasts for jerky compared to my Wustof knife. It was effortless.

Ken responded do my request timely and fixed the problem immediately.Ken has also proactively highlighted to myself there are items I ordered under pre-order category which is shown on their order screen and these items delivery time will be slightly longer. I wasn’t even pay attention to this until he highlighted and I appreciate this important information.Products arrived on time. I am very happy with all the 3 knives I have ordered.Will surely purchase from House of Knives again.

The broad but thin blade is brilliant for vegetable preparation and fine work.It is superior to any of my reputedly high quality European knives to the extent that I will probably never buy another western style knife.If you enjoy cooking and appreciate fine quality and workmanship, this knife will make preparation a pleasure; as it has for me.

Beautifully made and finished, great attention to detail using best of materials. Knife is light, has a very fine bevel and edge, falls through onions and tomatoes with very slight pressure, leaves carrot with a shinny cut face. Santuko style is very practical.Fine looking knife.

As many others have reviewed, this is by far one of the best designed blades out there. Perfectly balanced, thin kerf, that cuts effortlessly and with precision through pretty much anything. You get great force feedback as you cut never having to second guess your pressure. Keep it sharp and it won't let you down! Highly recommend this knife as a gift for that special someone who truly appreciates quality tools for the kitchen and use and care for them.!

The knife is the sharpest I have ever used, it is such a pleasure to work with in the kitchen and makes preparing food even more enjoyable, as a cabinet maker that hand sharpens his own chisels I appreciate sharpness and the quality of metal in these knifes

I bought the knife for my daughter’s birthday and she only got it last night. She has been so envious of mine and has told everyone it is not to be taken or used by anyone but herself. She is in charge of Christmas dinner and can’t wait to have a knife that cuts so beautifully.
