I've never used any brand or type of drum smoker before though I have 25 yrs of experience with offsets and reverse flows. I did hanging ribs and a whole chicken first. Burnt up the ribs but chicken was edible. Followed ok joes method of loading charcoal and lighting but it smoked heavily. 2nd cook I did hanging ribs only, used my own temp probes and loaded/lighted charcoal basket differently. Worked like a charm. Still plenty of experimenting and learning to do but I'm happy with it so far. Also have the OK Joe's Highland reverse flow and the OK Joe's Judge grill(not to mention the 4 other brands and types i have).All outstanding products for the price range.

I bought my pro a year ago. My only complaints aren't really complaints. I needed to add high temp caulk between the bottom and middle section. Wasn't hard to do. It sealed up great and helped with temp control. My only other complaint is that when the seal on the lid needs to be replaced it's going to be hard to get it to sit perfect like the original. I like the look of the big temp gauge but it isn't all that accurate. Because the heat source and food is in the same chamber, the temps are not affected much by outside conditions. It runs really efficiently with very little effort. I enjoy being able to cook on the pro while still spending time with friends, kids, and family. I love my smoker. So I recently decided to venture off in another direction and I pulled the plug and purchased this Oklahoma Joe Pro Bronco! So with first impression this a very solid unit but I am very disappointed with the quality and how I received it. The instructions were very simple to follow so that part was very easy. While this unit is very bright in color which is very appealing it also show the manufacturing grease that cannot be removed which is unsatisfactory being its price point! My unit also came with the lid being faulty as well and slides from side to side while closed and therefore the seal is compromised . I think there are a lot of quality issues that need to be addressed before I’ll ever buy something again from this company.

Well just before Memorial Day 2022, an add popped up and I notice that they were on sale, so I pulled the trigger and bought one right then. Well I’ve owned it for just over a week now and I have used it 3 times and all I can say is that this Smoker is awesome and is easy to use. The one thing that I read and know is that controlling the heat and having clean smoke is very important, so I paid close attention to the ventilation settings and I quickly found that it’s easily dialed in with small adjustments and when you get it to your target, it holds really well.The first three times I used it I loaded my Charcoal Basket full and lit the basket against one side (fuse method) and placed 4 chunks of Pecan wood on top, scattered. After allowing the coals to ash over and glow in the spot where it was lit, I lowered the lid and kept the vents fully opened and carefully watched the temp rise to 200 degrees before I started to dial in the intake vent by closing it down to around 2 on the dial (note- the dial moves on mine, so I focus more on the gap of the opening in stead) and as the temp slowly approach my target temperature I made a couple of micro adjustments closing it closer to the 1 on the dial and that was it. I hit my target of 250 degrees and I was able to maintain it within a +/- 10 degree range for the entire cook and two of the cook times where for over 8-10 hours and the fire remained hot for several hours afterwards. So now I know that if I load and start my charcoal basket off right, I can easily get 12+ hours of smoking out of my Bronco.All three meals came out extremely tasty, but I know there are things to do to become better at BBQing, but that’s on me, not the OJ Bronco! This little beast will be put through the ringer this year, as I’m now hooked on Smoking and I’m looking forward to the next time I get to light it up.Oh, and the cleanup process is very simple and easy too! I plan on doing a wipe down cleaning every week (or two cooks) and then a complete cleaning (with a food safe degreaser, rinse and dry) and then reseasoning once a month.If you’ve been looking at this smoker, don’t waste any more time, get it or the Pro…. you’ll never regret it!
This is definitely the last Grill/ Smoker I will ever have to buy. I had there of another brand's grill in the past 15 years and the structure just didn't hold up and I just continued to buy another. That will not be the case here, this smoker is so well made at 175+ pounds, it's no wonder that it will stand up to anything. The versatility of this product gives you so many choices and options you can become very creative at your craft. Believe it or not this wasn't even my first choice of purchase. The model/ brand I was interested in was out of stock and Lowes suggested this as an alternative choice. Bravo, this is more that I bargained for.

I absolutely love my regular Bronco, it's my go to cooker for day to day grilling and smoking. It's my favorite of 10 cookers owned because it offers outstanding bang for the buck. This Pro is basically just a larger version of my favorite, and based on the burn in temp results I expect this device to perform every bit as well as the smaller Bronco. I did consider a couple other 55 gallon size drum smokers, but ended up with the Pro mostly because it not only will smoke as well as those other ones, it has grilling capability that is far better. The mobility from the large diameter wheels is far better than the tiny casters most competitors offer. All in all, the Pro meets or beats the drums on every point.So, why only 4 stars? Nothing about the regular Bronco disappointed me, this one has a couple things that are not up to that standard. The orange color is really fun and adds interest. Unfortunately the lid and the bottom drum section are one shade of orange and the center piece is a different shade. Doesn't affect the cook, just looks bush league. If you get the black version then this complaint goes away. The other annoyance is the ash pan support ring. On the regular Bronco it sits flat on the drum floor dead center. On the Pro it can't do that because the fasteners for the legs interfere. While it's not a real operational problem for the fire box/ash collector to be just slightly offset during a cook the problem is when the cooker is tilted on the wheels to move it. The fire box components end up sliding around rather than being held in place as happens on the regular Bronco. Both those are admittedly nits being picked. But starting with the regular Bronco spoiled me I guess, I expect the Pro to be it's equal, just larger. Bottom line is this is a cooker, and there is no reason it shouldn't cook just as well as the regular, I guess I'm just fussy.
Honestly if it weren’t for defects I would rate higher, but received not one, but two defective units. I assembled anyhow and had to out in a lot of work to get them operational. Second one I got was warped badly and the two halves didn’t meet up well. I had to use a whole large tube of high temp sealant just to make it functional. But I will say the unit runs great, holds temps for a long time and performs as should. I am also a user of the Highland, so I’m a loyal customer and not just some beginner. I have been smoking for years and believe in putting my hard earned money with someone I can trust. Unfortunately didn’t work out as well this time!
I’ve had this for two weeks. I’ve used it about 6-8 times. It does ok as a smoker. The temperature gage is off by about 25 degrees. I was sent a replacement and it’s off too. It’s just ok as a smoker. But as a grill it’s absolutely horrible. The heat shield you sit the charcoal basket on warped and fell, dumping my entire basket of coals into the bottom of the drum. Also, I never could get the coals hot enough to sear a steak, even with the grill grates I purchased for it. I tried Kingsford, Royal Oak. Briquettes and lump. Never got hot enough to sear. For $850 I expected more. It will be going back to Home Depot for a refund.
I received this as a birthday gift about six weeks ago. In that time I have cooked; 2 briskets, 2 racks of ribs and 2 beer can chickens.Temperature and fire box loading are always the biggest things to watch when doing a good cook and this smoker makes it so easy! One load can last 15+ hours, and temp control through the air input/output was very simple.Flavors, tenderness, moist cuts of meat. My family thinks I am a way better cook than I actually am. I love this thing!
After watching several videos and reading multiple reviews, I took the plunge and purchased a pro (black). It arrived slightly bent and the screws didn’t quite fit properly. As a matter of fact, as I was tightening one of the factory screws, it snapped right off. So, I made some structural adjustments and also purchased/used stainless steel bolts/screws (1/4”x20x5/6 screws). Finally got the thing put together after a few trips to the hardware store. Assembly itself was simplistic, other than the issues listed above, which was nice.During the burn-in, I noticed the charcoals burn hit and fast, which is t a bad thing at all. Does exactly what it’s suppose to do.
