The Piper-Heidisick champagne house begins with a love story. In 1777, Florens-Louis Heidsick wanted to create a wine that would make his love smile. After impressing Marie Antoinette with his creation, his luck continued and he married Agathe Perthois in the same year. In the early 1800s Florens newphew and his friend Henri-Guillaume Piper took over the buisness and thus the house name was born. In the later 1800s the prestigee cuvee bottles were orginally adorned with jewels and gold, intertwining the champagne with world renowned jewlers. In the mordern day this champagne house may be remember by most through Marylin Monroe, in her famous quote stating she woke each morning with a glass of Piper-Heidsieck. This champagne region is known for its harsh climates, with hotter summer and colder winters. Limestone heavy soils present in the hills creates a climate designed for flourish vineyards. In the winery 100 steel vats are present and independently labeled for each cru and variety. They are highly monitored from beginning to end, with expert tasters carefully deciding which batches will be aged into a vintage or selected for non-vintage bottling. In the early 2000s the Piper-Heidsieck house began their commitment to sustainable and organic techniques, earning them a B-corp certification. The Rosé Sauvage is a boldly gastronomic wine, made with an unusually large proportion of red wines (20 - 25% depending on the vintage base) giving it impressive structure and intensity. It eschews the trend for water-pale rosé and delivers plenty of concentration and personality. This wine is deep scarlet red in colour. On the nose, there are aromas of blackberry, blackcurrant and strawberry. On the palate, there are notes of ripe orange with hints of saffron and a lively acidity. It is well-balanced with a long, smokey finish.
