Plantation Isle of Fiji Rum This rum is part of Plantation’s Signature Blends range. A series of rums from the Caribbean and South pacific that are finished in France, using local knowledge from the Cognac region, and using secret recipes from Maison Ferrand, producers of cognac and other fine spirits. Plantation Isle of Fiji Rum starts it's journey in (you guessed it) Fiji, using local Fijian sugar cane and traditional rum making techniques. The rum is aged for 2-3 years in bourbon casks in the tropical climate, before setting sail for France to be matured for another year in Ferrand (cognac) oak casks. This centuries-old process of “double ageing“ and the Fijian know how has created a delicious rum with warm notes of exotic fruits and raisins. The initial aroma is quite intense with molasses, pear and varnish, leading to fruity notes of apple, banana and goosberry. there is a touch of spicy nutmeg, sweetness from vanilla, and a hint of smoke. On the palate, this rum has a rich and rounded taste. It follows the nose with vanilla fudge, sweet honey, spicy ginger, fruity prunes and coconut.
