Water can get in underneath where the lid handle attaches. It's not possible to dry it and I think its a bacteria trap. Mine was faulty anyway, I had to send it back. Replaced with a different pan.

Usual scanpan high quality. I have all axis for my induction cooktop and it is beautiful to cook with. Perfect even heat.
The size is great. We use an induction cooktop and it is a fabulous pan to cook with, heating evenly across the base.
I did some research and decided to buy one. It is very heavy for me, as I learnt before I buy, but it is a great quality saute pan that heats up fast and cooks beautifully. A few notes: it is heavy so if you are after a pan to flip food, it is hard. However, you can tilt it by using both hands; Do not turn the heat to very high and I use butter, ghee or other high smoking point oil to cook for easy washing.
Brilliant pan, good even heat, even to the sides, giving more cooking area. Only need to cook at medium heat to get the same affects as other pans with high heat. It’s a keeper
Provides the most even heat ever had in a pan. This item get used every single day in our house. We use with and without oil during cooking processes. It is easy to clean, throw some water in it and drop of detergent, pop on the gas, boil for minute or so, turn off, anything left wipes out. We have found that the main handle never gets hot, but little one can get warm, we have found it depends on gas burner you use. Very happy with this purchase.
After reading all the reviews stating how as a well made stainless steel frying pan that it had 'non-stick' qualities, this prompted me to purchase it, however after usage we found food DOES stick and like any other similar pan it takes a bit of effort to scrub it clean. Marketing is indeed; exaggerated truth!
