The Shiraz from Shaw & Smith winery is made with 100% grapes in the Adelaide Hills area of South Australia. With low density viticulture and moderate use of wood, Shiraz is able to give excellent results even in lower than average temperatures. After careful harvesting, fermentation is carried out with whole bunches in open tanks and with moderate pumping over. This is followed by 14 months of aging in French oak barrels, new for 1/3. Intense ruby red and almost impenetrable, it has hints of red and black fruits in jam, spicy notes of black pepper and licorice. On the palate it maintains freshness with a recognizable body and predominant notes of red fruits that do not weigh down the sip. The tannins remain velvety and the finish medium-long. Ideal with roasts, sausages and grilled meats, it can be served with walnut bread and semi-mature cheeses.
