I love my Shun, beautiful and a pleasure to use. I bought my first Shun knife about a year ago and despite near daily use, it is still amazingly sharp. I have since given several as gifts and they are universally admired.

Beyond the obvious absurd uses such as tourné veggies and fluted mushroom caps, this knife is good for hulling strawberries, coring tomatoes, peeling ginger, trimming beans, pitting stone fruit, shelling peas - all those little meticulous jobs. Sharp OOTB, which is good because sharpening this thing is going to be... interesting. I think I'll just bring it back to Knifewear rather than mess it up on my stones. D-shaped handle is comfy.

I read about this style of knife in a newspaper article and had not been aware of it until then. I bought the knife and was amazed at how well it worked. The birds beak design is perfectly suited for pairing fruit and vegetables. As others have noted, this knife is razor sharp. So, care must be taken when using it. It is a beautifully made knife.

I have slowly managed to collect about 10 pieces of the shun cutlery and I absolutely am thrilled with each piece… this 2 1/2 in bird beak knife is wonderful for so many things I need especially helping me to cut along the curve of fruits making them more attractive and not wasting any fruit … I used to use it in my work when I worked for a company making fruit arrangements,I actually had that in my contract that they provided me with four shun knives of my choosing. I chose the six-inch chefs, the eight in chefs, the paring knife, and the bird beak. Again they are wonderful knives! I love the way the handle fit so comfortably hour after hour and they look beautiful to and of course they are beyond sharp! Don't forget that you need to hone (each use) and ... MoreHello! Don't forget that you need to hone (each use) and sharpen (not too often, but have a sharpening stone available for when they fell a little less sharp) them just like you would other quality knives to help keep them razor sharp! One piece of advice though, even though I think they say they are dishwasher proof dishwasher safe I would not recommended at all for the handle. I believe that my knives are so nice that I wash them after every single use and towel dry them and then hang them up in my knife rack which is a strong magnetic bamboo board (The magnets are hidden inside the bamboo to protect the knife blade) hanging on the wall to protect them. I am not a professional chef or anything and along with my blend tech these are the big splurge that is in my kitchen that I would not want to do without :-) One of the few drawbacks though is that I don't allow my husband to use them because he doesn't treat them like I believe they should be treated… He has own set of knives that he can trash all he wants! Lastly, we are down to just one child who is a teenager so I am comfortable with these knives hanging within reach… I might not be as comfortable if I had young children still in the home (I would probably keep them, along with any other knives) locked in a drawer or wat out of reach) but of course that's up to your discretion. I guess the only other thing I can tell you is that since I live in HAWAII near the ocean ((lucky me!) the humidity is very high and occasionally I have to scrap a tiny bit of rust off the flat end of my handles… But anyone who lives super close to the ocean knows that you cannot avoid rust that no matter how hard you try. They are beautiful knives and I highly recommend them! Aloha!

Too many knife designers seem to treat paring knives as step children. Many are too large, some have handles like a battle ax, and some are too thin and flimsy. This one is just right and it just became my absolute favorite in my collection of over a dozen paring knives. For a long time I began to think I might just design my own paring knife and market some truly ergonomic paring knives. No need... This one has it all. The 2.5" length of the edge is perfect, and the 1/4" notch for your index finger is perfect both in terms of being able to sharpen the full length of the edge and as a protection for your index finger when you work close in with your thumb opposing the tip of the blade, like prepping strawberries and other such finicky jobs.
