(123 reviews)

The Shun Classic Gokujo Boning Knife measures 26.2cm Total with a Blade 15cm, Handle 11.2cm. The Shun Classic Series unites centuries-old Japanese Samurai blacksmithing with today's modern and technically-sophisticated manufacturing processes. The result is an exceedingly high-quality range of Damascus knives, engineered with attention to the most minute details and designed to always retain its sharpness. The knives are therefore ideally suited for professional use. The Shun Classic blades are gorgeous to look at due to the distinctive semigloss pattern exhibited by the Damascus steel composite comprising 32 layers. This combination with the elegant, tapering handle made of black pakkawood, results in an overall aesthetic design that puts quality and functionality at its core. VG MAX steel with a hardness of 61 (±1) HRC forms the entire blade's core right up to its edge. Sheathed in 32 layers of Damascus steel, the knife embodies a peerless anatomy paired with a resilient blade that is both hard and flexible at once due to its hybrid composition. The Shun Classic blades have a double-sided edge.

This is my sixth Shun knife and like the others it is an absolute joy to use, especially for boning chicken and fish. I haven’t tried it on red meat yet, but I see no reason it won’t work like a charm there too. It also does a great job on detail work for veg. It has just the right amount of flexibility and comes incredibly sharp. Personally I have a number of ways to sharpen high grade knives and find Shun knives pretty easy to keep shaving sharp.Highly recommended.

Besutiful and Functional.

Hand washed, never even got the chance to sharpen and it chipped after 2 uses. Only used on suggested soft wood cutting boards. Very disappointing after spending 160$ on it. Was going to get one for my father as a gift but will be going with something else now after seeing the durability of this.

Fantastic...after a few strokes on a high grit stone
24 April 2015

I wasn't feeling too good about this knife out-of-the-box. It was ok. But as one of my first Japanese knives, I was a bit disappointed at first. Then, I gave it a very light exposure to a 5,000 grit stone and a few polishing strokes on 10,000. I know that's a bit extreme for a boning knife, but I didn't want to take off too much on a brand new knife. What a difference that made! Now, without any doubt, this is one of my favorite knives. It is wicked sharp and the geometry is very useful for breaking down chickens, bone-in ribeyes, and other meat-related tasks. This knife is described as a combination filet/boning knife. I have used it to make extremely fine fillets of chicken and veal, but it's a fairly rigid knife. I probably won't invest in a more flexible fillet ... MoreI wasn't feeling too good about this knife out-of-the-box. It was ok. If you are looking for a dedicated knife for meat and know how to handle a sharpening stone, this is a fantastic knife!

I bought it for my husband who enjoys cooking. He was very impressed with the quality of the Gokujo fillet knife. He particularly liked how well balanced it felt when he used it.

Great knife for breaking down a carcass
24 December 2023

Handy sharp and comfortable to use. It is well balanced and ergonomic. This knife is extremely sharp and the grip is perfect for my size large hands. It makes quick work of venison and beef for sure. I have used it for weeks on a maple chopping block and it is still sharp.

I use this knife a lot as I am in the industry, it’s maintains its edge and the curve gives a way better cut in my opinion. I use it to trim sirloins a lot and it’s a really great knife to learn butchery with

Shun fillet knife

First off, let me start by saying how much I love Shun knives. I am impressed with their quality and durability. Perhaps some of the best knives that I have worked with and thats saying a lot. I bought the fillet knife for all the whole fish that I buy and therefore need to remove the bones. As expected it is sharp and cuts through the skin and bones well. However, most filleting knives are flexible to help with the filleting process. The shun knife is not flexible. I would actually give it a 3.5 but thats not an option
