The Shun Classic 5.5” Santoku is the Asian version of the chef’s knife and features more of a sheep’s foot blade with a spine that drops sharply to meet the hardened, acutely-ground cutting edge. The Santoku doesn’t have the sharp tip of the chef’s knife and is not as easy to use for removing stems and cores from fruits and vegetables. However, although the ultra-thin blade is not as well-suited for general chopping, the Santoku excels when it comes to slicing starchy vegetables and cross-grain cuts of poultry, fish, and meats. And no knife works better than a Santoku for cutting paper thin slices of potatoes and garlic, or juliennes of peppers, cucumbers, and other fruits and vegetables.

I love this knife. It's a short version of another santoku that we have but my wife prefers this one for the size of her hand. Amazingly sharp, and precise, Shun always over delivers.

I punched this knife to add to my other 8 Shun knives. They are great quality. EXPENSIVE, but you get what you pay for. Never have to worry about cutting through anything with these knives. You just have to be VERY careful when handling them given they are razor sharp. Not good for a novice or young person to handle. Also you need to properly care for them. Not the knives you toss into a drawer with everything else.

Very sharp, and stays that way. Very lovely to look at as well, always had a thing for Damascus steel. Finally had to resharpen after a year of daily use. Will buy more Shun knives as funds allow.

good knife, just a comment/warning about the packaging - the original packaging is a simple cardboard box not wrapped in anything and Galaxus put it into a bigger box with a lot of free space, as a result the knife dropped out from the original box during transit and I've found an unprotected sharp blade when I opened the parcel.
Another great knife by Shun to add to our collection. A nice sharp edge that is easily maintained and a great all around knife
One of the best purchases I’ve ever made. Absolutely love my knife - very comfortable and already making a huge difference for me in the kitchen. Additionally, my shopping experience with The Cook’s Edge was fantastic. Highly knowledgeable staff who made the experience of finding my perfect knife really fun! We are so lucky to have this business in Charlottetown - looking forward to visiting again soon and growing my knife & kitchen tool collection.
I love my Shun knives. I have purchased 4 so far. They hold their sharpness extremely well and look so good on my magnetic knife board. Hoping to add to my collection soon.
The weight of this knife is perfect - feels substaintial in your hand, yet very light at the same time. Using the Saantoku has immeasurably increased my love of cooking. The staff were so helpful - no pressure to buy, very patient as I tried all the different knives they had, answered all my questions, gave me tips on how to change my cutting method. In general, just the best guidance possible when making an important purchase like this.I can't give this knife and the staff any more than 5 stars, or else I would!!! ;)
Excellent knives. Very, very sharp.
I have never had a Really good knife before. The ones I have had were all right to start and are now quite dull. So having my first professional Japanese, all I can say is “WOW!” I’ve used it 2 nights in a row and it makes cutting vegetables so effortless. I will be buying more
