Good cutting board so far. I was expecting it to be a bit bigger, but still works fine. It’s light weight and has a cypress-pine smell, which I like. I think with any wooden board, oiling this one after a few washes is necessary to maintain longevity. I’ve been using it with my Shun knife, so, let’s see how it works out in the long run. For the price I paid I hope it gives me a couple of years.

I never thought I would be impressed by a cutting board. There is something about the wood used to make this cutting board that makes cutting and chopping more enjoyable. It is very lightweight but it does not slide around on the quartz countertop. The wood is softer and forgiving and you can just tell that the knife blade is not getting dulled. It kind of slides across the grain of the wood yet slicing and dicing is stabilized. I have used an Epicurean board for a very long time (years) but this Shun board is just more 'tactile' and well, you just have to use it to understand what I a saying. I only wish I had purchased the medium size. The small is a bit too small.

I purchased this directly from Shun/Kai when on sale. They explain the strong foresty/piney odor (I call it aroma) that is part of hinoki wood, and I like the smell, although it is fading. I got the medium for cutting vegetables, the size is convenient for that. The board is light, a bit thin, but hasn’t warped, and I wash it and dry it immediately, as I do the knives, leaving it out to air dry completely. I wet it as suggested prior to use, and have only slight staining. They say it does not need oiling, I believe it doesn’t hurt, but have not oiled it The knife marks are present, but I accept those as protecting my expensive knives, which remain sharp!
I've been looking for a Hinoki board for some time and was delighted to find this one on sale. The quality of the milled surface is very good. However, if my local WS store had this in stock I would have rejected this particular board as the milled catch grove was very rough on both of the short ends. I had to sand the grooves to eliminate the rough wood to eliminate the potential of having food particles and drippings trapped and causing health issues.

I’ve originally used bamboo until I learned the hard way and left a chip in one of my shun Bob Kramer knives. So it’s now Hinoki or nothing. Now you don’t need do this as Hinoki is naturally water repellant and anti-bacterial but I went ahead and seasoned the board as my climate is super dry. Though it’s not advertised on William Sonoma, I already knew that the Hinoki board was going to have a pleasant cypress wood aroma which I find nice addition. Though it’s much more subtitle now that I’ve seasoned the board. The Shun Hinoki cutting board is amazing. It’s thin, light and protects my Shun blades perfectly. It also smells nice, which is an added bonus. The design is benign, which was a big draw for me as well. No more thick, checkerboard cutting boards, thankfully!
I ordered this because the description stated it did not stain. The first time we used it to cut a lemon it had a yellow stain that could not be scrubbed out. Then we cut green onions and now have green stains. We have had this cutting board for about a month and it is already warped and rocks on the counter. So between the excessive staining,and the warping, we definitely would not recommend this cutting board. Wishing I could send back for refund.
I needed a lightweight yet quality cutting board--this fit my needs perfectly! I highly recommend treating the board prior to use with Boos Mystery Oil and Cream for a truly professional experience in your prep work for fabulous meals! This board is a pleasure to use!
I ordered this cutting board in May 2020. The smell of the wood is really unpleasant. We tried washing it, and eventually we left it sitting in a cabinet to see if the smell would dissipate. 10 months later, it still stinks to the point that we haven't been able to use it. I emailed customer service at WS and got no response. The CS chat function was similarly unhelpful. When I called and spoke to someone, they said there is nothing they can do and they have no obligation to help further. Cannot recommend this product.
