I bought these shears to cut chicken bone and cut flowers. They do neither. AND if you are working with them and they turn just the way in your hands the come apart and clatter to the floor. (Or your foot) It happened once to my husband and once to me. This is the first time I have ordered from Sur La Table and I am surprised that no one on their staff has tried the shears. If they did they certainly would not carry them.

I have owned two other cooking shears. They were well known quality brands but they stopped working well after only a few months.The Shun shears are very high quality and they cut perfectly. What I like is that they come apart for easy cleaning. I am certain that I will not need to buy another in the future.

After reading the great reviews about these scissors, I purchased them even though they cost more than most others in the same class. They are designed to come apart for easy cleaning (which they do) but if you open them too wide, they fall apart in your hand. They aren't very sharp and most times, they just shred or crush whatever you are trying to open.

A really good pair of shears for use in the kitchen. They are very sharp. They have a good "feel" to them.I like how they come apart for cleaning.One thing missing is detailed care information with the shears.Tha manufacturer recommends using a little oil in the shears while they are not being used. Originally, they told me to use something like WD-40 or a light machine oil. Not a good idea for food-contact instruments! Use mineral oil instead.
These are fantastic kitchen shears! I was tired of using junk that couldn't cut anything. So I researched these and bought them. They've stayed sharp and have cut everything I've used them on. They are worth the money.
I waited too long to replace my old shears--surprised I didn't sever a finger with the dull things! These have done some great work in their first few weeks. I like the various functions and that the blades come apart (though this makes them dangerous to your feet if you try to use them like a razor blade to slice a label or package tape). Very happy so far with these!

My original impression was not-so-great, but decided to give them time. I use them every week, sometimes more than once, and have been disappointed at the decline in quality, I only use them for poultry, and occasionally other meats. Never for anything but cooking. Now, the shears tear the skin rather than cutting through, and they barely have enough zip to cut off wing tips. I thought maybe I was losing my grip, so dug out the old pair, and no, grip is just fine. I love the feel of the shears, and love the way they come apart for cleaning, and not unexpectedly. I just wish they would cut better. These are well made shears. Sharp and solidly built. I haven’t used them much yet, but so far they have performed well. I want to see how these do at spatchcocking a chicken. Maybe I’ll leave another review once I find out. I also like the fact that they can be completely separated. This makes for effective cleaning and eventually sharpening. .
My wife loves them; they are comfortable in her hand and cut without the effort and frustration of our old shears. I can't say they have been thoroughly tested but so far they are incomparably better than anything I've had in our kitchen. The action is so smooth and easy that you don't believe they can shear the problem materials like plastic, until you see the work being done.
this and my cutting board, yes, not my chef knife, are the two most reached for and used tools in my kitchen…the Shun replaced a well used Kitchen Aid shear and will likely replacing all of the other kitchen scissors in the drawers.Well made, ergonomic, sharp.
