The heat capability is amazing and it will stay hot all the way through a dinner. Works on / in all kinds of cooking surfaces including gas, electric, and induction, and oven safe up to 500F. We love the crusting on the edge that develops on all the vegetable dishes we make.

The Staub oval gratin pan, makes simple foods taste great. Love the crispy edges the cast iron produces when used for macaroni and cheese, potato gratin, eggplant parmesan, and creamed spinach.Perfect size for two hefty sides, and makes my husband and I feel like we are dining in a fine restaurant. Love that I can prep dishes the evening before, and simply finish in a preheated oven without having to worry about shattering. Easy clean up, and is also dishwasher safe.

I love using the cast iron baking dishes for my side dishes, I am a huge fan of crispy edges and with the cast iron, you get perfectly browned cripsy edges and tops. These dishes conduct and distribule heat evenly resulting in beautiful side dishes. They retain their heat as well, so taking them from the oven to the table for serving, they will stay warm. They clean up so easily too thanks to the dark enameled finish on the inside.

Don't be fooled by the black inside and out; this is not your Grandma's cast iron. It is enameled outside which makes it very chip resistant.
