Teff Flour Bob's Red Mill 567g
A unique and ancient grain that offers a wealth of benefits for individuals with gluten sensitivities or dietary restrictions. Teff, native to Ethiopia, is a naturally gluten-free grain packed with essential nutrients and a delightful nutty flavor. This tiny grain packs a punch when it comes to supporting a healthy diet. Its high fiber content aids digestion, while the abundance of iron and calcium contributes to maintaining strong bones and supporting overall wellness. Teff is incredibly versatile and can be used in a myriad of recipes. From fluffy pancakes and hearty bread to delectable cookies and muffins, teff flour adds a unique flavor profile and a delicate texture to your gluten-free baked goods. Additionally, teff grains can be cooked and used as a base for porridge, salads, or side dishes, offering a wholesome and satisfying addition to any meal. You can use teff as you would any other grain, but the teff-to-liquid ratio is a bit different. A 1:1 ratio of teff to liquid keeps the seeds intact and al dente, perfect for use as a sprinkle on top of oatmeal, muffins, soup, steamed vegetables, or just about anywhere you want to add a healthy little crunch. Teff grain is most popularly used to make a flatbread called injera. For a creamier dish, such as breakfast porridge, increase the liquid to 1:4.

My children loved the texture and color of bread made with about 1/5 of the total flour amount Teff. The other flours were 1/5 white flour and 2/5s rye. Since the combination is very low gluten, I used about 1/5 gluten flour to give the bread a good rise creating a high protein bread.I did not end up with a high bread, but the denseness and chewiness was perfect for sandwiches and toast. The flavor was rich.I did not think it was a good match for sweet toppings, like jam, but it was wonderful with savory sandwich fillings like cheese, meats, and veggies. (The savory flavor did not stop my kids from making PB&J!)

Every one of the dozens of grains/flours I have tried from Bob's Red Mill has been superb. The company's Teff flour is one of my absolute favorites. Mixed with spelt or Kamut flour, it is fantastic for most cookie, pancake or quick bread recipes. I also love all-Teff waffles. The flour has a lovely, chocolate color, a complex, appealing flavor, and a fine grain that blends well and creates baked goods with a crispy, substantial texture that is never tough or heavy. An added bonus is Teff's excellent nutritional profile. It is fairly expensive for a flour, but absolutely worth it. I buy it by the case through Amazon every few months and use it in all my baking. For those wishing to incorporate more whole grains in their baking, I cannot recommend Bob's Red Mill Teff ... MoreEvery one of the dozens of grains/flours I have tried from Bob's Red Mill has been superb. Recently dx'd with celiac and we had been buying teff for injera from Bulk Barn where, even thought they label the teff bin "gluten free," risk of cross-contamination is too high! This stuff is great. Two cups ferment nicely with just a tbsp of regular baking yeast and 3 or so cups warm water. Leave that covered but breathable for two days and the teff starts making our kitchen smell like vanilla (is there vanillin in teff grains?). Anyway, it's a delightful ferment and I love this stuff.
I had just discovered I have sensitivities to several things, among which are gluten and wheat. Since I am game to try anything, I bought several types of flour to bake with, one of which was the teff flour. The package says it is good for baking so since gluten-free bread is quite pricey, I popped this in the bread maker. The flavour is akin to rye, without the bite, and is a little lighter in colour. It seemed to be a little drier as well (previous iterations of bread was made with brown rice flour, which was a bit more moist). I am trying to imagine sweet baked goods with this flour and suppose that the sweetness would work well. That said, I don’t think I will be buying this flour again for bread. The one star off is for the dryness.
I like BRM's teff flour because it is reliably gluten free (I like ALL their GF products for this reason; Teff is just one of them). I also like their teff because it is a *brown* teff; the only other teff I can get in town is "ivory", and I want that dark color; I make my own gluten free sourdough dark bread (instead of "white bread"), and teff is key for this because for obvious reasons I can't use whole wheat. I have perfected my GF dark sourdough bread over the last two years (below is a photo of loaf #98!). It actually uses a bunch of different BRM GF flours (teff, millet, sorghum, amaranth, quinoa, tapioca and oat). My recipe used to include brown and sweet rice flours, but recently I discovered I had an issue with rice so I modified it, with good success. I am so grateful for this Teff flour! I make small batch biscuits every day. The flour is fresh, delicious, and helps keep my iron levels up to normal in my blood, which genetically run too low. It is the best! It works well with my saladmaster stove top cake as well, and you can't beat pancakes! I do not need to mix it with any other flour either, but I like a dense, moist, dark brown nutritious, flavorful bread! Gluten free to boot! Once I made biscuits using tomato pizza sauce for the liquid - incredible!!! I like to use my imagination and never follow recipes!
Of course, there's traditional injera--and teff is essential for the texture and flavor of this Ethiopian flat bread. But don't stop there. Teff is a highly nutritious addition to other baked goods, with a nutty and distinctive flavor. I use it sparingly--as an accent flavor--a couple of tablespoons in a loaf of bread--or maybe a little more in a pound cake (with mostly sorghum). Try it as an accent--and then build from there!
