Tojiro 240mm 'DP' gyuto chef knife. VG-10 steel core with stainless cladding, western style riveted handle. HRC 60-61. 365mm overall, height at heel 48mm, 247 grams Tojiro's DP series are made with a three layered blade. VG-10 stainless steel is the cutting edge at the core, and it is clad with stainless. A great heavy-use work horse, VG-10 is typically not our favorite steel to sharpen due to the wear-resistance from it's cobalt content. However, it commands long edge life and is fairly low maintenance. Heavier than some lasers, BUT lighter than euro-style chef knives, it provides a very good introduction to japanese knives and/or transition for those coming from Henckel/Wusthof.Holds a good edge and is easy to resharpen (VG10). Balance point is perfect for pinch grip with a good amount of hand clearance to board. D-shaped handle is comfortable to hold even left-handed (it has a 50:50 bevel). Great knife! I love the balance where my index finger and thumb meet the blade while I use it. I use it to cut just about everything, but mostly meat. Breaking down NY strips and slicing hanger steaks for orders. It’s quite versatile and stunning at the same time. I don’t have to worry too much about rust, but definitely take care of it for preventative measures. Very sharp, clean edge, and affordable.

When a friend of mine told me "These knives make your food taste better," I shook my head like he'd been brainwashed. Then I got my own.This is a five star knife for me. It feels at home in my hand, and the weight and balance are perfect for me. The experience of buying it in the shop and having the opportunity to test a few, while also getting a lesson on how to use it and care for it made me know it was the choice for me.The finish with its patina makes me feel like I'm unsheathing my sword every time I cook. Has my child caught me kissing the knife before and after using it? Guilty.You can order this online and you won't be disappointed but if you can- go to a Knifewear shop. The website shows the What, but the shops explain the Why. Perfect length and grip for

Perfect length and grip for myself. Quite heavy as this is my first time having a 240mm coming from 210 blades. Risky not visiting the store to see and feel the actual knife but online reviews helped me a lot. I'm working on becoming a chef and I think having a great knife will help me in my career.

This is my first serious

This is my first serious knife and I couldn't be happier. Being used to old, worn knives that haven't had a proper sharpen in decades, this knife was like seeing colour for the first time. It glides through onion with barely any resistance and feels remarkably comfortable in the hand. I tried out one of our older knives again to cut some vegetables as a quick comparison and, well...there is none. I'd rather chew my onions into chunks than go back to using the old set. I made sure to buy some sharpening equipment as well, as I'd like to ensure it's properly maintained for many, many years to come.

I got this knife as a gift for my brother, he's spent over seventeen years working in professional kitchens and loves a good knife. The finish is beautiful, and the quality of the workmanship is amazing. As always with a Knifewear product, it comes like a razor out of the box and glides though just about anything our home kitchen can throw at it!
