Easy to use, simple workflow, heavy aluminum body feels very solid, looks nice, grinds very well - I use 3.4 for espresso and get really great shots on the naked portafilter… the dial is very smooth, but it moves about 1/10th or one dot while the grinder is running from 3.4 to 3.5. Some people have said it is slow, but so is a weber key and any other low rpm grinder so that seems like a silly criticism. I haven’t needed to use the included bellows but I do about 4-5 spritzes with the rdt bottle that was included and I get less retention and no static mess this way. For the money, I don’t think it can be beat. My next grinder will likely be a substantial price jump to get any noticeable improvement in the cup.

The Varia VS3 is my first higher end grinder. I wanted a zero retention, and minimal noise. It is certainly quiet, and certainly stylish in a 'Brutalist'/'Minimalist' way (I chose the matte black.). With a continuously variable grind setting this might just be the cost of doing business. I have not tightened any nuts or whatever because the act of setting the grind position seems firm enough, and I do not want to make it too tight to move. I will just have to keep an eye on it.BTW it has made the coffee taste so much better that from my Lido 3 hand grinder which had been forced back into service by the crash of my cheapo consumer grade grinder.Summary:Pros: Stylish, compact, quiet, uniform grind size, virtual zero retention, user-serviceable.Cons: Grind setting drift, pricey.Peter C

Was debating between this and the Fellow with the new burrs. Glad I went with the Varia instead. Looks striking on a counter. Some might say that it takes a while to grind but I did not find this to be the case.Be warned: my model has the power unit outside the main body which means that there is small brick (kinda like a laptop charger brick) outside next to the unit. If you care about looks, make sure you have somewhere on your counter where you can hide the charger as the cable is quite short.

But at $399 for the Varia, there's plenty left over for a dedicated digital scale.The manual suggests that the grinder is likely to produce a significant amount of static in the first few weeks of use, and this has been our experience as well. One month later this effect is much reduced, although not yet completely eliminated.Thus far the only quibble, and a minor one at that, is the readability of the numbers on the adjustment dial. We have the matte black version, where the labels are rather small and difficult to read in anything but bright daylight. If you are not adjusting constantly, or your grinder sits in a well-lit location, this is probably not an issue...The Varia performs exactly as advertised. Overall an excellent value!
I wanted a grinder without fuss - no digital or dosing electronics to eventually go wrong. just burr and on/off switch. Varia was the perfect machine! With it's direct drop dosing, don't have to worry about bits getting stuck and dose retention. This machine is gold. It's pretty quiet too. Does take a little longer to grind because of it's lower RPM, but thats purposeful so you get a cleaner grind. Solid Machine. Good price. DO IT. Get one.
I’ve been thoroughly impressed with my VS3. The ease of use and setup was very refreshing, but second to that, it’s VERY quiet compared to other units I tried out. At this price point I’m not sure you can beat a single dose grinder. My only critique after a month of use is that the static retention is still present, and creates more cleanup. The booklet says this should go away after roughly 5kg of coffee has been ground.Still, can’t think of a way to beat this price & performance combination.
This thing is awesome for its price. Single dose, minimal retention if using bellows. The grind is slowish which is obviously intentional to change the flavour profile but I just use this as time to set everything else up. Even though it doesn’t have an auto off feature, unless you’ve left the room it’s obvious to hear.I think a slight drift happens at first when using it as things loosen up but dialling in again down the track fixes this up and haven’t noticed it again.Definitely worth getting.
I pre-ordered the VS3 which arrived soon after the release date. The construction is top notch and pleasing to the eye. I use it for grinding espresso shots for my Barista Pro. The machine is to all intents a zero retention single dose grinder. The grind is light and fluffy with no clumps and the shots pulled meet my expectations fully. A good price for a machine that delivers what the makers promise. Well worth the money and highly recommend it.
The VS3 is exactly as I expected and performing very well so far. Dialing in for espresso is very easy as the fine adjustment range is very large. Currently, depending on the coffee, I am dialing espresso between number 3.5 and 5.0. The distance between each number on the dial is about 1 inch, has 10 smaller marks between and is infinitely adjustable. Also the arrow that marks the setting is on a magnetic ring that is movable to take into account the use of a different burr with a different zero point.
