Best boning knife and general butchering knife ive ever used. Ive skinned deer and beeves with it and done all or most of the cutting with it also. No cons to this knife that ive seen so far. Holds an edge real good also

This is by far the best knife I’ve ever used. I literally used this and the breaking knife of the same brand to butcher a hog. Not once did I have to stop and put an edge on this knife, let alone sharpen. Not saying that it will stay sharp indefinitely, just saying anyone who has butchered a 400# hog knows, any knife will need help staying sharp enough to finish the task. I love the short blade length for ease with my small hands and just enough flexibility to slide against the ribs and separate appropriately.

I have always used the Victorinox 6”boning knives for meat processing. I decided to add the 5” knife to my order and try it out. As a woman my hands are smaller than the men’s hands that I process with. What a huge difference! The same Victorinox quality but in a size that fits my hand much better. I used mine to dress, skin, quarter, and piece up my Whitetail. Worked great! Maintains sharpness. Yellow is fantastic as it is visible in night conditions after a last light hunt... even covered in fat and blood, it maintains its visibility better than any other color in my opinion. To remove stubborn deer fat from the knife while at deer camp, I place my knives and saw in a cheap disposable pan and cover with boiling water. This knife cleans up well. To sanitize it and wash it much better back home, I throw it in the dish washer and set on high heat, sanitize mode... the knife holds up perfectly. After I've sanitized it and touched it up to my smith ceramic sharpener, I cut my steaks, chops, etc.. Once again, holds up great on plastic cutting board. I am satisfied with the knife. I find it easier to trim more fat off chicken pieces as I have more control of the knife then I did with my former knife.
Love my new Fibrox Pro 6” Flexible, Straight Boning Knife by Victorinox. It’s nice and sharp and certainly makes the job a lot easier. I would recommend this knife and would recommend the great customer service provided by your company.
Handle fits nicely in hand. Non slip. It is very sharp, so need to be careful while using it. Clean slices through variety of items I used it on. Carrots, corn on the cob. Roast. On and on. My new favorite kitchen knit. Versatile.

Great knife. I would highly recommend this to anyone. Warning to all though: this knife is extremely sharp. I have a really sharp high end chef’s knife and this boning knife is even sharper right out of the box. Great value in my opinion.
i used these knives for 8 years in a meat shop. When I left work and started college where I moved home I discovered my parents knives were awful, so my sister bought me one just like I used in the shop. That was 40 years ago and I still have the same sharp knife that is almost indistinguishable from a brand new one that I bought a few years ago that just sits in a drawer. Easy to sharpen, holds and edge well, and can use a steel to bring and edge right back. Listen, there is a reason meat shops all over the world use these knives. Cutting produce or anything else is a breeze, I have given them out as gifts at xmas to all my kids, friends, and inlaws. Best bang for the buck in cutlery out there. The handle is great and a curved blade is much better than a straight edge.
