Fabulous knife. Its a bit heavier than I thought it would be ,as I was trying to replace an older version of this knife, but its still a fantastic knife. Excellent value for the price.

Great easy to use and super sharp. My wife found a little heavy and would really like a scabbard for it. It appears from your previous advice that there was not one available for that model.

We’re a family of vegetarians, so I can’t comment on what it’s like with meat, but chopping veg is so easy that it’s actually fun. I bought this and the pairing knife for my husband’s birthday and he loves them! Would definitely recommend them both.

I'm a 13+ year chef veteran and I must say I'm very impressed with this knife. I have had a few knife kits in my career and I have been very choosie as of late what knives I should buy. This is my first expensive chef knife and it works well as a daily driver. I started with the victorianox fibrox 8 inch chef knife to see the quality of the steel, and I use that as a "beater" knife in my work kitchen everyday. It holds an edge really well for the price, and if properly maintained it will last you a lifetime. This particular knife has a balanced weight to it with a decent weight on the blade. It is thick at the neck to add that weight but the blade is very thin. It will tire you quickly with long projects but is great at getting those precise cuts. It has a satin ... It has a satin finish in the face which doesn't make it stand out, but I don't believe your knife needs to be painted gold and laced with diamonds to make it function. The rosewood handle adds lightness but a solid grip. Since then I have bought many victorianox knives and will plan on finishing my knife set with all victorianox in my knife block.
This is the most expensive knife I've ever bought, so I expected it to also be the best. It is not. I'm sorely disappointed in how long the blade stayed sharp. I should have returned it to Bed Bath and Beyond, but didn't. We haven't even used this knife for 6 plus months, as we use our $20 Costco set instead - the blades on them are still sharp, even after a year.
Perfectly balanced, well made blade and handle. It is definitely on the larger side so it needs extra care when wielding, but for chopping or cutting through bigger stuff it’s very nice to have the longer and taller blade.
Very happy with this knife. Great handling and grip, beautiful looks.Only human minds get sharper with use... Knives will typically get dull over time. Can easily be sharpened with a wet stone or other off the rack knife sharpener
This knife feels (almost) incredible in the hand. It would be perfect out of the box, but the edge between the bolster and the blade, where you pinch-grip, is a bit sharp. Nothing a little sandpaper, or careful application of the edge of your sharpening stone won't sort out, otherwise this is perfect.Be warned, this is a European style, and is quite thick, so it can be a little difficult chopping through large, hard veggies with the extra width of the blade. This is perfect for me since I already have a thin Japanese santoku knife that I use for veggies, and I was looking for a robust knife for tougher jobs. The geometry is great for a rocking chop, and it comes scary sharp out of the box.
Excellent quality and excellent price. Very happy with my purchase.
Recently got this knife, and I am thoroughly impressed. Great weight, actually has a nice heft to it, but not unwieldy. The weight makes it stable and helps in cutting. It feels like a thoughtfully designed tool, well made yet useful. It's not just a good looking knife. The handle is comfortable and attractive; the wood and bolsters are downright classic. One of my favorite traits is how easy it is to sharpen. I hit it with the steel, and it is razor sharp. I can slice tomatoes, steak, even crusty bread. If you like quality and razor sharp edges, get this knife. Oh, and it looks like a million bucks.
