Extremely sharp and compares well with more expensive knives like Wusthof and other brands. Highly recommend this, just beware it is extremely sharp and it's great quality. Highly recommend it and the price is very low.

purchased this item and one other knife because my husband already owns one and loves it. This knife appears to be made really well. I made sure it was the same design as his current one because it has held up so well. His current knife is the biggest kitchen knife I've ever seen and I wanted to buy him a couple smaller more universal ones. My only complaint would be how the knives were packaged. They came in a beat up outer box ( blame the shipping company) and inside they were simply wrapped and stuffed in a large envelope?! No boxes! I have purchased a $5 pocket knife that came in a nice and simple gift box. I paid these guys almost $80 and received an envelope! Now I need to find my own boxes to wrap his gifts in. Very disappointing!
Already have the small and large GM chef’s knives and very happy with them. What I think really makes them good for me is the balance and chunky handles. I thought the santoku would complete my collection. However, now I have the three, the filleting knife looks very, very tempting😜. Highly recommended. Worth oiling the wood though….
I am still happy with my limited edition santoku, cause its of course different from the standard as well as an collectors item.Apart from that, now to the specs.It's made from the Thor Damaststeel, 2 powdersteels cladded into one.RWL34 and PMC27 powdersteel.It's only hardened to about 60 HRC and that's very noticeable.The edge feels soft and loses it's sharpness after 2 weeks already after normal use, food preparation every day.You can really feel and see the difference in the handmade craftsmanship level between a high end Japanese knife and this victorinox limited edition (which is priced high end).Thats means, this santoku from victorinox is way below standards.The sharpener or the polisher, whoever did this is not even close to the level of real ... That's a no go for a high end knife.It also feels so thin and light that it probably will not last you a lifetime.Since it's a hidden partial tang, the structural weight has to go through the handle all the time.This is not on the same strength as an old style Japanese WA-handle which are designed to stand these kind of stresses.Although i am using it every day, only buy this if you want to collect special limited items otherwise, the quality is lacking for such High Price.I am also someone who likes to buy this kind of stuff to test it out.Greetings all
My first chef's knife was a Victorinox. They don't have fancy handles like some blades; they're functional. The handles are comfortable, not slippery, easy to wash and make you feel safe and in control when handling the knives. So I decided to pick up a few more - both santoku, one fluted and one regular. They're just general use kitchen knives and they work great. The fluting doesn't really matter much for many things but it does means cut veg falls off the blade a little easier. They've been just as expected - good knives, easy to use, sharp as heck! And they feel light and well balanced.I picked up a magnetic knife holder to hold the knives on the wall, which seems good so far - looks good and works well.Delivery was on time and safely packed. Good job all!
So, bought it in the Vienna's Victorinox store. The one I wanted was not in stock. So took that one. It's strong, solid, tha handle is convient. But once you leave a drop of water on the blade it will rust at this specific point. I didn't expect that the steel is so sensetive for water.
I love the grip on these. Great for people with smaller hands. I tried out the fibrox version chef knife for a month, I found it very uncomfortable because it was too big, and there's that weird finger guard notch that makes gripping a knife weird. I also love the knife's silhouette and smooth green handle.
I bought this knife in the early 90's and it has seen a lot of use. Solid and heavy enough for chopping, sharp enough for slicing, agile enough for most boning, wide enough for smashing garlic, sturdy enough to stand up to it all. The handle is comfortable and nonslip, so safe even with wet hands. Grip it firmly with your full hand, or barely grip it while using thumb and forefingers on the blade for more delicate work, it works.I did take it to be professionally sharpened, once after just over 20 years, but regular department store sharpeners keep it sharp enough.
