The best fish filleting knife I have ever bought. Very sharp. Hardly any waste now when filleting whitting. I was so impresses with the quality. I now own a full set of Victorinox knives. Well worth the price. If your going to buy only one filleting knife do yourself a favour and buy one of these.

This fillet knife thus far is the easiest knife to fillet any fish. I don't even have to cut as many times and slices like butter. I length of blade and handle grip was ideal for my purposes and fits perfect in my tackle box top tray for easy access.

Got the Victorinox on the recommendation of the bearded butcher youtube channel and I can confirm that this knife is the real deal. Cheap at $40, flexible enough, very durable overall including the edge, only had to hone it twice to keep it razor sharp, which is what I need for trimming my black angus briskets. Thoroughly recommend this to anyone starting out in American Barbecue, needing a knife for trimming brisket.

Quality Victorinox build and materials. Reasonably sharp out of the packaging, and easy to maintain and better the edge with a honing rod.Nice oversized sheath to limit contact with the blade to retain the knife's edge. I believe the sheath is a 'one size fits all', used with both curved and straight Swibo fillet/boning knives fitting both 16cm & 20cm blade lengths.Nice grip on the handle and the colour is great for visibility.
I have had the same swibo knife previously for over 40 years. I managed to snap it cutting into a pumpkin. Decided to replace it straight away because I use it so much, it has a great feel to it. Well balanced. It was a great price so I brought two of them, but no more cutting pumpkins with it.
Great knife easy to use. Mostly used in in the kitchen at the moment. I still have not touched the edge with a sharpening stone. I always use a good butchers steel. Gives the blade a good edge. Its been about 6 weeks now. If your looking for quality. You can not go past the Swibo. Make sure you make the gliding sound on your steel. Not too soft and not too hard.
Built to do a job not to fit a price, Loved it so much for filleting got a second one as an everyday go to knife in the kitchen.Easy to sharpen and holds a great edge for what feels like forever if I was clocking up 12 hour shifts in the abattoirs no doubt this would be my go to tool of the trade.After a proper workout all I’d change is make it an inch shorter Say 5” to make it more manoeuvrable when quartering and boning out cuts and perfection! Get what ya pay for lads
Victorinox Swibo are the best value for money knives out there. The new hard plastic sheath is much safer than the old soft sheath too. Highly recommend.

I bought this knife while in the shop looking at other products but am so glad I got it. Its a good size and weight and stays sharp. The quality is just as you expect from the brand. Its really good for cutting fruit.
