This stuff is the ground up bean (or so it seems) and is bitter, though not any more than many nuts are.I actually snack on these, but few people will enjoy them like this. I consider this a 'super food' and also mix it in sweet things like granola type cereals, like I would nuts.One drawback is that there are bits of woody material (maybe from the shell?) that I occasionally bite into and must spit out. so much better than chocolate chips! i mean, sure the sugar is great but this is so much better for you. The whole family is trying to reduce our sugar intake and this is one of the first products we purchased as part of our "sugar detox" plan. So far we are loving teh results. We also purchased the cacao powder and use it in all recipes that call for cocoa! this along with the cacao powder are our kitchen staples now

Solution to kids eating too much sugar? Trick them with cacao nibs! I made delicious homemade granola bars using rolled oats and cacao nibs. They ask for them every day
I add to my smoothies (greens, with frozen fruit, banana and water) that I drink 5 times a week. They add a nice subtle flavor and a slight crunch. I wanted them primarily for the magnesium. I had knee pain that was very uncomfortable. I've noticed that the pain has gotten noticeably better. I still have some slight, but not as bad as before. I find this a better alternative to taking magnesium chrond supplements. I also wanted them to help me wean from my coffee addiction. Hoping the caffeine would replace what I get in my coffee. I did still get slight headache, but not the sharp, intense one I usually get when I don't drink coffee at all. I would recommend.
I put a tablespoon of nibs in my chocolate whey protein shake everyday, adds an excellent crunchy and earthy chocolate flavor to the drink. The blender chops them up into smaller pieces than out of the bag. IMO the Viva Naturals nibs have excellent flavor and freshness, superior to the last brand I tried. I would give these 5 stars except for there is some sort of rock hard particles at the bottom of every glass, not sure if it's shell or what but it crunches like bits of stone grit. I am short a few molars already (waiting for implants) at this point so this is very disconcerting if I bite down on these. It's always in the debris at the bottom of the glass so I can discipline myself to leave that bit but I really want to chew the nibs up completely!
These are like chocolate, but better. They're actually good for you! Had a hard time believing that, but it's true. Lots of health benefits from eating cacao nibs!
I enjoy eating these because they have no sugar, yet profess to provide the antioxidants of pure cacao. These are not unpleasant to eat in my cereal, but, of course, I have no way to verify any of the suggested health benefits. I can say without reservation that they taste as good as the 90% cacao bars of bittersweet chocolate I have also ordered from Amazon. I use about a tablespoon in 2/3 cup of dry sereak with milk. My wide will not eat them. She prefers a bar of 60% cacao semisweet chocolate. Organic claims are similar to the antioxidant claims. This stuff keeps the elephants away, but I never had elephant infestations before eating them either.
These nibs taste very good! If you like 100% cacao, you'll love these. They have a slightly fermented taste which adds even more to the flavor profile. My girlfriend is on a sans refined sugar diet, so I bought these for her and she loves them. We eat them by themselves. This is the first time that I've had cacao nibs so I can't compare them to any other brand. They provide us with lots of clean energy and relaxation thanks to the high levels of theobromine and unique cannabinoids(Anandamide and 2-AG which our body already produces naturally). I highly recommend these nibs and will be purchasing them again!
