Bought this when they first introduced the Ikon series, which I find to have the absolute best handle and grip of any knife. Ive been cooking professionally for over twenty-five years and Wustof is the choice of true Chefs. "Henkels are for Housewifes" and Ive seen Shun snap at the bolster. Its a pro tool and as sharp as heck, my co-worker calls it my "scalpel" and its unsurpassed for fine slicing, especially vegetables like tomato, shallots, etc.. Precision cutting, not chopping away, works perfectly

It's a classic and a kitchen "must have". Whether you choose the Classic or the Classic Ikon this is the knife I didn't know I needed till I got one. I use it for almost everything - it's the first knife I grab from the drawer. I purchased this version as a gift for my sister, and the Ikon version will fit better in her slightly smaller hand. The knife is perfectly balanced, easy to get a firm grip on, and of course it's Wusthof, so it will last literally forever. I also have the 8" version, but this seems more useful to me.

Being a Japanese knife fan, purchasing a German Wusthof Classic Ikon chef芒鈧劉s knife was going to be a risk for me. No fear..... what a great knife. Fits well into my hand, well balanced, very very sharp, cuts with ease and feels quality. My only reservation about this knife is it芒鈧劉s weight. Compared to my Kasumi, this Wusthof is heavy. It took a little time to get use to the weight. Japanese knives are light and well balanced. Beware...this knife (like all quality knives) needs special looking after. No dishwasher for cleaning, no chopping bones or frozen food, it芒鈧劉s hand washing and drying. A real bonus with this knife is that Wusthof offers free lifetime sharpening. Recommend

Excellent knife, Top quality, decision came down to Zwilling JA Henckels four star II and Wusthof Classic or classic ikon, wanted to actually use an ikon. So i bought one. Here's what i think, the 6 inch ikon cooks knife Knife is top quality and this is the lowest price i've found anywhere, well balanced, nice handle feel but i soon discovered that I need a knife with a bolster(fingergaurd) on my knives or i will cut myself easily due to my lack of good knife skills. This knife is razor sharp, i couldn't ask for anything sharper. The ikon is a great design and top quality item, I highly recommend this knife series IF you know how to use them safely. The knife itself is perfect. Excellent handle and it’s very sharp. However, adding the monogram resulted in an unfortunate result. Unlike other websites, Williams Sonoma does not show or tell you where the monogram will be. They monogrammed on the blade instead of the bolster which is what I wanted and have on other knives. If I had known, I would have bought the knife elsewhere.
I tried out one of these knives during a free knife skills class I took at W.S. I couldn't believe how comfortable it was and how much better it was at chopping. I waited a few weeks to purchase it because it's not cheap, but I am so glad I did. Fine craftsmanship like this is worth it.I can't believe how sharp it is compared to my old knife (which does need sharpening but it has never been this sharp!). It's also surprisingly comfortable to hold. It makes chopping/slicing a breeze!I love my new knife and am now always looking forward to prepping dinner! I purchased the 8" Chef's knife. It's great for everything!
My previous cooks knife is larger than this replacement, was 20+years old, sharpened each time I used it, and blunt in comparison to this new replacement cooks knife. This brand Wusthof is supposed to be one of the best in the world, there's little doubt in my mind that this is true.Watch out though, you could easily cut yourself with it if you don't concentrate on what your doing.I use the knife, hand wash it, dry it immediately and put it away.My advice is to never put it into a dishwasher, which also is the manufacturers recommendation too.
Extremely, extremely sharp, well balanced, comfortable and versatile. It immediately became my go-to for most things. Be careful with handling, though, because the length of the blade has caused me to carelessly poke myself a few times while washing/drying or during general use (user error, not due to the knife). For smaller hands consider the 6" blade.
Never paid much attention to my knives as when they are no longer sharp you just buy more lesser quality knives so you always had a sharp knife around. The feel and the quality of this knife and also making sure that it’s blade is covered is one way to extend the life of the knife. Being forced to work from home so food prep is important and sharp knives make that super easy. Will get other knives from this collection over time and also going to order some bald covers or a knife roller or a magnet holder.
I purchased this knife along with a Shun Kaji Santoku as a replacement for a Henckel Chef knife after 40 years of great service.I found this knife to be thinner, lighter, and sharper than the older Henckels. I think that's just newer knife design. I know these are precision tools designed for cutting, but I'm not going to put it down and use another tool when I need to crush garlic, etc. I use the side of the blade for that.I've had this knife for about six months and I love it. I reach for it or the Shun Santoku equally, simply depending on my mood.I'd say I lean toward this one for cutting meat and the Shun for vegetables.
